So I know nothing about 360's, but I want to finally buy one, I just don't know which one to buy. Everyone tells me not to buy the cheapest one without the hard drive, and I know there's one for $200, so is that worth it? Because if it's not worth buying unless I have to spend $300, I'll just forget about it.

If you want to do, well ANYTHING with the 360, you'll need to buy a hard drive. You don't need to buy the $300 version to get a hard drive though. The $200 version lacks a hard drive, yes, but you can spend $60 to get a 20GB hard drive "starter kit" that comes with a Microsoft refurbished hard drive, 3 months of Xbox Live, and a head set.

They should have deals that you can get a small harddrive with the 200.00 system.
I personally have the 120 gig, and everything with the system. When you first get it though you don't need all the extras you can add them as you grow into the system. Pick up some top rated games with your extra pocket cash.

Yeah, you pretty much need a HD these days especially if you plan on taking it online and if you don't plan on going online, it's probably not worth getting. As Koda said, you can add a HD for another $60, but honestly, it's better to just drop the cash and get the $300 bundle with the 120 gb HD as well as Pure and Lego Batman.
I upgraded to the 120 gb HD and it's handy as hell just for loading the games you play regularly onto the HD. If you're only playing one or two games at a time, this can be done with the 20gb, but it's more hassle adding and removing.

I highly recommend on getting one with a hard drive, and the bigger one the better. I got one with a 20 hard drive, and wish I had a higher hard drive with it.

Just save up and buy the 120GB hard drive. Why the 120? Because it comes with a transfer cable so you can move all your game saves and stuff over to the 120GB drive. You could grab the 60GB drive, but it doesn't have the cable.
