I know the majority of them involve the villain plummeting to their doom, but after so many years of doing it, there's certainly variations that stand out. I'm a bit partial to these two.
Plus, one of the rare non-deaths-by-falling, about 2 minutes in, but really, it's one of the best chase scenes Disney's done:

I'm probably one of the few that actually thought Jafar's death in Return of Jafar (as well being one of the few Return of Jafar fans) was awesome.

Scar's is iconic, but Frollo gets my vote for sheer melodramatic pizzaz! ;D

Scar's was my favorite. He screwed over his own family and it's the only time I've ever thought "f*** yeah!" during a Disney movie.
Unless you count Jessica Rabbit being on screen, but that's in an entirely different context.

Syndrome from The Incredible's is an underrated one. Pretty disturbing for Pixar, who are tamer in comparison to Disney and their earlier movies.

Oh man, Princess and the Frog was so great. I really hope they do more traditional movies like that.
Rattigan in The Great Mouse Detective. It is just another fall, but he turned SCARY AS f*** before he was finally vanquished.

I do believe Facilier is the only Disney villain to be killed by his own song.

As evident in "Oliver and Company", the way the dobermen die is pretty gruesome (death by electrocution).
Obviously, the most iconic is Scar's death, where he places all the blame on his master plan to kill Mufasa and muscle in as the leader of the pride on the hyenas, who in turn bring revenge.
Damn... Facilier's death is original, but disturbing in a high degree (his debt is not only repaid by death but that a monument was created for that purpose).

Ursula's.
That entire sequence probably the only time where I saw the hero in a Disney movie (Eric, at this point of the flick) as a real badass.

I remember Gaston's as being rather graphic. Didn't he get impaled on something?

Just watched it, Gaston doesn't get impaled but he does stab Beast. He goes for another one but loses balances and falls into a pit screaming like a bitch.
