Kane after taking a few shots to the face covering his mouth then looking at his hand to see if there's any blood. It may not really be a "monster" mannerism, but its a great way for him to sell his opponent's offense.

"ASK HIM!!"
Also, I always loved Page's pulling himself up out of the corner before a match or hanging off the corner ropes before the bell rang, like he was a caged animal waiting to break out.

Wasn't exactly "subtle", but I loved it back in 1996 when Shawn Michaels would point to his opponent, and a chorus of boos would just ERUPT from the crowd, then he'd do this humble little gesture to himself, and the crowd would go nuts for him. It was a great way to get a reaction from a crowd.

Haku had a thing where he'd get a two count on an opponent and turn to the ref and make like he was going to kick him. The ref would jump back five feet while everyone in the crowd gasped audibly. It was cool as hell.

Also not completely subtle, but apparently Foley took this little bit from Candido: as a heel, if in a situation where you're running away from the face, literally lift your legs up as high as possible and hitch it instead of trying to be cool about it.

Other than his python---everything Jake Roberts did was subtle.
