Undertaker vs The Rock vs Kurt Angle, Vengeance 02 is one of the more memorable ones
Tons of great matches at ROH shows, but its been so long I don't really remember what they were specifically.

Benoit and Eddie opened a Smackdown! in the Summer of 03, that was pretty amazing for me sitting in the third row to have THAT open a show. Also saw a Cena-Undertaker match that night that was very good.

Flair vs Steamboat at NWA Chi Town Rumble 1989 I'm jealous, I have to admit. Mine was probably at Fanfest in '08 when Mike Jackson had everybody on their feet and going crazy. When the ring announcer introduces the next match with, "The following contest, and they're going to have a hard time following that one," you know you've seen something good. The fact that the guy was 59 years old at the time made it seem that much more mind-blowing.

Looking at some of the matches you posters have posted I am really really annoyed that I didn't make my friend go see ROH when we were in Chicago in 2008. Really annoyed.

Undertaker vs Shaw Michaels - Wrestlemania 25 The atmosphere was incredible during this match, people were either on the edge of their seats or standing up through out the whole match.

Eddie Kingston VS Chris Hero - Fight Without Honor at Final Battle 2009. Kingston taking THAT move was one that still makes me cringe to this day.

Dec. 1977-Harley Race, NWA World Heavyweight Champion vs. Jerry Lawler, Southern Heavyweight Champion, in a standing-room-only Mid South Coliseum with the world title at stake. (around 15,000 in attendance) One fall, 60 minute time limit, sanctioned by the NWA.
Lance Russell enters under a spotlight as Ring Announcer wearing a tuxedo. Extended introductions of Race and Lawler, listing their titles and other accomplishments in detail. The match itself features numerous near falls, with Lawler seemingly on the cusp of victory several times. The time runs out at 60 minutes with Lawler holding Race in a sleeper as the bell rings, seconds away from being the new World Champion. The crowd is on it's feet for the entire match and going nuts throughout.
Race played the role of traveling NWA champ to perfection, while Lawler played the underdog hometown challenger. In this situation, the champ had to beat the challenger, but also had to make him look good so the promotion could continue selling tickets the next week. Lawler was normally a heel at that time, but was wildly cheered as the face in this match. The next week he was back to being a heel, and sales were brisk.
I didn't realize at the time how good this was. Race and Lawler were gifted performers in the prime of their careers, and they had the crowd in the palms of their hands throughout. Brilliant stuff in retrospect.

My favorite match Live was a Kevin Von Erich/Ric Flair one hour draw at Astro Arena in Houston either 83 or 84
