It's an ambitious thread idea, I know, but It's been quite some time since the topic has even come up at all anywhere, and it might be useful to have some sort of guide for newer fans of wrestling who might want to get very serious about their hobby.
So, in a nutshell, which matches would you consider part of the essential wrestling canon? Which matches would you include in your list of matches to watch before you die?
I'll start with an obvious, if somewhat dated choice - Savage/Steamboat at WrestleMania III. I'd also include Bulldogs vs. Valentine & Beefcake at WrestleMania 2, and the Triple Threat match at Wrestlemania XX when Bob Holly won the World title.

Honestly anything from 92-94 AJW and JWP was amazing. There's also 1000 AJPW matches from the 90s I could (and probably should) add.

I know it's lost its status as the top pick of the IWC, but I still have to include the Flair-Steamboat trilogy from '89, as well as Flair-Funk, the I Quit match at the very least.
The '92 Rumble, if for no other reason than Heenan's commentary.
Hogan-Andre, Wrestlemania 3. The greatest "spectacle" in the history of the business.
Magnum-Tully, I Quit cage match. I've seen a lot of matches between guys who supposedly hated each other, but I've never believed it more than I did with this one.
Flair-Race cage match from the original Starrcade
In a surprise pick, Colt Cabana & Jimmy Jacobs (w/Bobby Heenan) vs Jack Evans & Roderick Strong (w/Jim Cornette) - ROH All Star Extravaganza 2. Just a fun match, and Bobby and Jim kind of steal the show without really trying with their antics at ringside.

All of the 94 Super J Cup At the very least, Liger vs. Sasuke. I would also like to add the final for the IWA Japan King of the Death Match 95. I've shown this to quite a few friends who had only watched the big two and they couldn't take their eyes off the screen.

Mitsuharu Misawa & Kenta Kobashi vs Toshiaki Kawada & Akira Taue 6/9/95 AJPW
Toshiaki Kawada & Akira Taue vs Mitsuharu Misawa & Jun Akiyama 12/6/96 AJPW
Both absolutely fantastic tag matches, as someone who isn't all that into tag wrestling. They're similar, but the difference made by switching Kobashi with Akiyama is huge. Kobashi has an injured leg and Kawada and Taue proceed to absolutely brutalise it, seeing him as the weak link in a very dangerous team. On the other hand, Akiyama is still the fiery youngster at this point, in the ring with three of the very best in AJPW, and you literally see him becoming a top star as the match goes on. They're both long but each build amazingly to their conclusions. Great, great matches.
For one I've watched recently. I think Funk vs Flair in the I Quit match has to be there. It's a perfect display of two incredibly skilled wrestlers casting aside most of their technical ability because they hate each other and want to beat the crap out of one another. Most of the promos building up to it were fantastic and the match is a long, brutal war between two of the best ever.

Eddie Guerrero vs. Dean Malenko, ECW's Hostile City Showdown '95. (4/15/95) I've rarely, if ever, seen a 30-minute time-limit draw and think, "That was so quick! I want more!"
Another time-limit draw: Sabu vs. 2 Cold Scorpio, ECW's Cyberslam '96. (2/17/96) They almost literally spend more time in the air than on the mat.
Rey Mysterio Jr. vs. Juventud Guerrera, 2 out of 3 falls, ECW's Big Ass Extreme Bash. (3/9/96)
Edit: And I would be wrong to not request watching any early Dynamite Kid vs. The Cobra or Tiger Mask from the early '80s. I just showed one to my son not too long ago and had to explain "not everybody did this kind of stuff back then. This was revolutionary."

One that doesn't get mentioned as much because of how great the follow ups were but, deserves mention is the Hardys v. Edge and Christian from No Mercy in the first (at least in WWE) Tag Team Ladder Match for the finals of the Terri Invitational Tourney.
