There were many more during the territory days, but every promotion needs guys that make the main eventers look good and pick up a few wins along the way. Who were some of your favorites?
Wild Bill Irwin in Crockett/WCW in the late 80's. Black Bart as well in the same time period. Maybe I just like cowboy characters.
Eddie Gilbert in the NWA. Never rose higher than US tag champ, but I still mark out to his matches with Windham and Muta. Also was the guy who challenged Windham and Falir to a tag match only to have a returning Ricky Steamboat be his partner.

I know that when he was Intercontinental champion, the title was regarded as a bigger deal than it is now, but I always marked for post-IC title Tito Santana. I have no idea why, but there was something about him that made me want to cheer. I almost crapped myself when he made it to the Match of Survival (or whatever it was called) at the 1990 Survivor Series.
Also, "Leapin'" Lanny Poffo. Once I found out he was Randy Savage's real-life brother, I liked him even more, and I cheered my ass off when he beat Hulk Hogan by count-out on Saturday Night's Main Event.

Would Owen Hart count? I've never really known where to place him, card wise.

I was thinking guys more on the losing end, but Owen as the Blazer would fit perfectly I think. High Energy Owen as well.

Brad Armstrong, if he was around a decade sooner he would have been a world champion at some point. Frankie Lancaster was always a favorite of mine as well.

My first wrestling card was a CWA (memphis) show in tiny Scottsville Kentucky. Frankie was there, wrestling Todd Morton. Even though he was the heel he was a nice guy to whoever asked for an autograph.

Does Al Snow count? I know he was over like rover, but he never really got above European Title level.
Great wrestler.

Disco Inferno and he was seriously over and talented. Should have been US Champion and seen talented enough to seriously challenge for the World Title (but never winning it though). The pop he had when he beat Saturn for his 2nd WCW TV title was enormous. Hell, his first WCW TV Title win got a hell of a pop. The fans loved him and wanted to see him win more but WCW were really flaky in his booking.

I always liked Prince Iaukea as a kid. As well as Super Calo in WCW.
