I also remember Booker visably corpsing during a Bookerdust/Kane/APA backstage segments, at Goldust's antics and the prospect of some Hot Lesbian Action. Obviously the infamous Sid Vicious Half a Brain incident. You could see Nash in the background cracking up pretty hard after that line, even with that stuff on his face. Yeah, and Hall is absolutely creasing with laughter.

Steve Austin and JBL's SNME segment the night before WM 22. From the moment Layfield screams that Canada plays real Hockey to the 'One minute man' ad lib and JBL's immediate response watching Austin nearly cracking up (not to mention JR and Lawler laughing on commentary) is one of the funniest things I've ever seen on WWF/E tv.

I have one of those wrestling events the WWE would hold in England on tape (I think it's Mayhem in Manchester) and in a tag team match, Ken Shamrock starts laughing at something off-camera. His tag partner was Owen Hart so I'm guessing he was the cause of it. Weird seeing Shamrock laugh though.

That Divas match, with Eve doing that awful botched cross body off the apron where Maryse and a few others landed wrong. Maryse definitely was holding in a laugh, and then the very audible "YOU OK GIRL?" caused Cole and Josh to break out in laughter for a few seconds.

And then there's Bobby Heenan's infamous commentary on one of Jim Duggan's WCW matches. Eh, Bobby was 'laughing' at the idea that Jim Duggan went to college. It was in-character.

In the weeks leading up to Survivor Series '97, there was a brawl between HBK & Bret in the ring which members of DX and the Hart Foundation tried to break up. At one point, most of them were crammed into one corner and for some reason Jim Neidhart tried to pull Rick Rude's hair which was pointless as Rude's hairstyle was very short and this caused the Anvil to turn away and burst out laughing. Still not sure exactly what he found so amusing but the look on his face was priceless.
Also involving Rude, a few months later in WCW, he done an nWo segment where he forced the announce team of Tenay, Schiavone and Heenan to cover their eyes, mouth and ears respectively which led to Schiavone corpsing. He tried to turn away from the cameras but the best the production team could do was switch to the camera behind the announcers which made it just as obvious.
The Gene Okerlund ones mentioned so far will never be beaten for me. I must have watched the one with Patera about 50 times and it never stops being funny.

The segment where Triple H breaks JR's arm. Triple H said something along the lines of Stone Cold being in a hospital in Minn. and having his legs up in the air like some cheap postitute, then camera pans out to show a corsping Chyna.

When Lesnar and big show collapsed the ring on that SD in Orlando. The first camera shot over the ring you can see Lesnar laughing, and I think Show was, too.
Snitsky and ... Kane? fly off the top of the ramp into some boxes and such. Snitsky was laughing.
There's a story about during the early parts of the HHH/HBK 2002 feud when they were fighting behind the arena, HHH ends up in a dumpster or some other large container. HBK jumps on him, and there's a slight pause after contact before you hear Hunter selling it. Both of them started laughing and had to try and stop before the cameras caught up to them.
