Plus the beginner level of minesweeper but I suppose it would have to be on expert for that to count.

Super Mario Land for the Gameboy I think. I used to play it a lot as a kid because I found Super Mario Bros. too hard.

In no particular order:
Super Contra (NES) - Every combination of me, my brother, and our dad played this for hours at a time. My brother and I got blisters on our thumbs, and when they burst we just wrapped them up and kept going. We finally got to where we'd beat it in 15 minutes or something crazy like that.
River City Ransom. A beat 'em up with RPG elements, different gangs, and some good ol' cheesiness. Not sure how many times I beat this on NES, then I beat it some more when I found roms. Just when I thought I might be done with it for a while, I discovered a hack called "Wilford Brimley Battle," and started over again.
Both Knights of the Old Republic games. Love them.
I'd probably add Greatest Heavyweights for Genesis.
