I remember this one too. They used to play it on Nickelodeon a lot of times. IMO, the art and animation were pretty good and the vast majority of the stories were great as well (I distictly remember liking their version of Snow White over the Walt Disney one).

For awhile, been trying to remember the name of this Nickelodeon cartoon from the early 2000s or so with a space delivery boy kind of premise and a weird guacamole fixation.

I swear to god I thought for years I was just dreaming of this show. I actually owned a couple VHS's of this show back in the day. Wish I could find them. Another interesting thing to note is that Rusty the Tin Man is the same VA as Yukon Cornelius.

Here's a cartoon I completely forgot about until I came across this on youtube -
I remember it being in an early weekday morning cartoon block with the Punky Brewster cartoon.

I remember being really impressed with this cartoon (especially the catchy opening) on the weekends:
...then being bewildered at how craptacular it became on the weekdays:
(but there were a few hilarious episodes hidden within I'll grant)

Speaking of great openings/great cartoons in general:
Learned SO MUCH from this edutainment show, damn those sneaky writers!
EDIT: Geez, I watched a metric crapton of cartoons as a kid, here's one more that just popped into my head (and I'm cutting myself off after this one):
This show was pretty much as badass as it ever got for cartoons, IMHO. Saying it had an epic storyline is a severe understatement, plus the writing and dialogue is surprisingly sophisticated and witty for a kid's cartoon. They need to do a remake of this, or a movie or something.

Wow, Count Duckula there's a cartoon I completely forgot about that I watched all the time. Also does anyone remember if there was an Ed Grimley cartoon, I am pretty sure there was one on NBC.

My God just looking at that opening I could tell this show sucked and I was an idiot for liking it. Although the animation in that intro does look pretty spiffy for its time.
