The jump from 16 to 32 was definitely the most significant quality wise

I voted Atari to Nintendo. Atari games seemed too simplistic and one note, while Nintendo games felt like full games, with whole worlds to explore. Also they looked better and had great music.
Although might I add, the biggest jump in visual quality was PS1 gen to PS2 gen. We went from a blocky mess to beautifully rendered 3D.

Saturn/PS1/N64 to DC/PS2/Xbox/GC. A lot of 3D games from the 32/64-bit days look like hot garbage now.
Very close second place is Atari/Intellivision/etc. to NES and Master System.

Nintendo to super nintendo/genesis.
Just look at both Castlevania and Mario on NES and then Super Mario World and Castlevania 4 for all the proof one needs.
More so Castlevania.

Not big on Castlevania (or more accurately its sub-genre) so I can't really comment on that, but Mario's kind of a funny example for me. I love World and it's the first game I played, but I actually prefer the original game. Granted, I'm also the one weirdo who likes the original Super Mario Bros. more than I do 3.

To me it was from Atari to NES, no question, not even close.
What you could do with a NES vs. Atari is mind boggling. While graphics and the size of games got better as time went on, the improvements were more incremental.

Well i wasn't there to the jump from atari to NES
But the jump to the 3d era was amazing,probably the biggest jump

I say second gen (Atari) to third gen (NES) is the biggest in general. The Colecovision was definitely the most powerful system of that era (by far, I would say) and while these games were damned fun, you had this:
Atari
Intellivision
Colecovision
and went to systems that COULD look like this:

Atari
Colecovision
NES
Admittedly, the Colecovision compares far more favorably than the Atari, Intellivision, or any other second gen system in the US market but it still

Atari to NES.
Although the move from 2D to 3D was impressive the games weren't always high quality, it took a while for 3D gaming to be perfected.

The 4th to 5th gen is a bit too obvious, since it was the transition from 2D to 3D, but for a real bump in the graphical polygon count, I would have to go with 5th gen to 6th. The number of games that were capable of 60fps at launch (like Ridge Racer V) meant that the new games immediately outclassed the old games. Shame that the same couldn't be said about this current gen's game until later.

PS1/N64 to PS2/Xbox gen. That's when 3D was finally done right and when things such as online play became the thing. That, and the PS2 is hands down the greatest console ever.
