Jericho/Malenko - a feud lasting throughout the spring and summer of 1998. Had some good-to-great series of matches, but was overshadowed by the nWo angle
DDP/Raven - similar to the Jericho/Malenko feud which also happened around that time, once again overshadowed by the nWo. It seemed like their undercard had something to offer outside the whole Wolfpack/Hollywood fiasco.
WWF:
Jericho/Benoit - had a series of matches to determine the better submissionist/technical wrestler. Don't remember if they fought in any other matches after 2001.
Bret/Diesel - Everyone talks about Bret/Shawn, Diesel/Shawn, and Diesel/Mabel but I don't hear WWE mentioning this feud as much. Had a match at the Royal Rumble which ended in a draw; didn't have a rematch until 11 months later at Survivor Series.
I'm sure there is more I can think of, but those could be some examples.

Jericho and X-Pac had a feud in 2000. Feud started in a weird way too. William Regal came out and cut a promo on the crowd about proper meal time etiquette. Jericho came out and ruined that segment, so you would think that he and Regal would be feuding. But then X-Pac came out and attacked Jericho and thus they ended up feuding. (Although Jericho and Regal would end up in a feud a few months later.)
