That one in the original SvR, where you to combat the reversal-happy tag-team + VKM in a 3-on-1; fortunately, it was in a time where the submission was still borked, so the opposing team could not break up holds. Cue dropping McMahon and just locking in a facelock 'til he went red and gave up. Big Show/Ric Flair (depending on brand chosen), Sunday Night Heat level, Day of Reckoning, GCN (2004). Honestly, may it rot in the bowels of whatever damnation you please. Yes, it was an interesting angle to take, with a virtually impossible AI to nail home how much of a rookie your avatar is, but it's hard to keep mind of the fact when you're on the 5th minute of Ric Flair reversing absolutely everything you throw, and refusing to put you out of your rotten toil. I actually have managed to win the impossible first match before. It sucks though, because it doesn't change a damn thing about the story. The very next cutscene is the exact same thing.

Not sure if it was Day of Reckoning 1 or 2, but I always struggled when fighting Triple H or Undertaker (depending on the brand) at the end.
First time I ever did the Handicap Match against the APA in No Mercy I got my ass beat, but doing it at later times never seemed to be very troublesome.
Pretty much ANY match involving more than two people in Wrestlemania XIX. Collision detection in that game was so awful. Going for a Last Ride when Booker T kicks us mid-animation and breaks the whole thing up. UUGGGGHHHHH.

But WWE 13's Jericho vs. Road Dogg match pissed me off to no end. That match was the absolute worst. I'm sorry, you want me to do 18 different things, INCLUDING position a table so I can powerbomb Road Dogg on it, all in under 5 minutes? Screw you.

Trying to beat Hulk Hogan in Shut Your Mouth was pretty difficult on Very Hard mode if you weren't HHH, Rock, Undertaker, Angle or Austin.

I actually never beat the DOR 2 Fatal Four Way cage (had too much pride in changing the moves of the AI to diva's moves) nor did I ever beat the tag team title ladder match in No Mercy.

SmackDown: Shut Your Mouth. The match before your WrestleMania Main Event:
You vs. Br-r-r-rock Lesnar vs. Da Undatakah! No time limit, no DQ, falls-count-anywhere.
I swear, those two use the first 3 minutes to kick your butt to dang-near fatality level. Then they spend the rest of the 25 minute match beating each other up with chairs, whipping each other into the ramp & stage. Most of your time is being spent recovering.
(I think the last time I won was because there was a glitch in the game; Undertaker got stuck in the ramp and I pinned Brock after diving off of the stage.)
Edit: Just adding to this the fact that I was my CAW, Curry Man, when I won. Gave him either the Spiderman upside-down entrance or the Eddie Guerrero entering in a bouncing low-rider. So full of win.

Here Comes the Pain The storyline where you have a valet who's a love interest and you need to cheer her on outside the ring and assist her to victory as she does battle with the guy who has been stalking her. You can't control her, only your wrestler and if the ref sees you get involved, she gets disqualified. For me, this story would always become me having to guide Stacy Keibler to victory over a heel Hillbilly Jim. I think I did this storyline with my created Jushin Thunder Liger. Some of the backstage vignettes were all kinds of hilarious. Fire Pro Wrestling Returns has the absolute steepest learning curve I've ever encountered in a wrestling game, so was a challenge at the best of times. But by far the biggest challenge I encountered on it was beating Mitsuharu Misawa, the guy was absolutely unstoppable. I had to go for a walk to calm myself down after those matches on one or two occasions.

In Pro Wrestling, the last title defense you did before fighting Great Puma. Depending on if you chosen King Slender or not, you faced him in your last defense. Slender was relentless and refused to be pinned. Most of the time I just beat him up on the outside and try to get the countout win. Facing the Great Puma in Pro Wrestling especially if using a weaker character like Kin Corn Karn or Starman was a tough task. Puma could hit a couple of special moves and make you weak enough to pin within the first 2 minutes. You had to hit him with a multitude of moves for a long stretch of time before his first alarm went off. "Pee-King Slender-Bender" was easy, it was that frickin' Amazon in Title Defense #9 that would get me steaming every time. And how DARE you insist Kin Korn Karn was "weaker". Mongolian Chop to you!

Was it No Mercy that had the 2 on 1 cage match that required you to murder both guys magically at the same time in order to even have a chance to climb to the top?
99% of the time this required an hour long match and somebody would hop to their feet as you somebody struggle to leave the cage.
Controlled throwing madness.

The APA backstage match in No Mercy was no real problem for me, but the standard handicap match took about 5 attempts and brought me close to tears last year.

I remember one time playing HCTP, getting into a last man standing match with Chris Jericho. That dude simply would NOT lay down for 10. He was always up at 8 or 9. I beat the shit out of him with sledgehammers, chairs, whatever. Still, up before the 10 count. I had to quit that match and take a loss because I just couldn't go on with it anymore.
