A few debate arguments: West Virginia - Heath Slater? He's the only one I know from WV off the top of my head John Morrison was also born in WV- and Jamie Noble was billed from state. Noble vs. Slater's a strong debate, but if so, Morrison would defer as the bigger one either way. Kansas City would be a strong question mark, since the Kansas and Missouri border makes it a double-one. Either way, I would argue Randy Orton for Missouri, just to make a more "guaranteed" pick and look if there's another Kansas option beforehand. I'm from West Virginia (obviously based on my name here) and I have never heard of John Morrison being born here. I'm not saying you're wrong. I've just never heard that before. Interesting. West Virginia also has Necro Butcher and Big Bully Busick (even though Busick was born in Stuebenville, OH. He was billed from Weirton, WV and last I heard, he still lives there).

I feel culturally obligated to answer for my home state of Vermont.
Given the painfully short list of wrestlers born here, I think we can safely go with Vivian Vachon.

I also saw Steve Williams and Danny Hodge suggested for Oklahoma, but realistically it has to be Jack Brisco. He was a high school and college wrestling legend before turning pro, where he went on to become a 2 time NWA World Heavyweight champion when that belt was (arguably) at it's most prestigious point. In his Junior year at Oklahoma State, he won the NCAA light heavyweight national championship, and was the first Native American to do so. He was never even taken down once that year. Unbelievable.
He is still very highly regarded in Oklahoma, particularly among the Native American community. I've always thought an incredible amateur Fantasy match would be Jack Brisco in his prime vs. Kurt Angle in his prime.

Iowa: Ox Baker or Seth Rollin. I want to say there another famous wrestler from Iowa but I can't remember at the moment.
EDIT: Jessie Godderz is from Iowa and Im guessing Bob Holly live in Dubuque Iowa now o.O

The Miz probably has the most visibility when it comes to Ohio, at least in the modern day. I'm gonna say Brian Pillman, he was a Horseman and had a presence in all the big 3 in the mid/late 90s, a time when the business itself had more visibility.

Unless you're going with "born in" as the qualifier, then you can thrown in Ultimate Warrior, Terry Funk, or Mick Foley.

I never knew Gorgeous George was from Nebraska, that's sweet. He was one of the best heels ever, and a big influence on young Cassius Clay. Figured our biggest guy would be Mad Dog Vachon or Baron Von Raschke

I dunno if this would factor in to anything, but "Macho Man" Randy Savage was born in Columbus, Ohio. If we were to go that route, then Macho has infinitely more visibility than Miz, Ziggler, Ambrose, Snow, or Pillman ever wish they would.
