Watching the October 6, 1997 Raw, H and Michaels are fully into their DX schtick by this point but later that night when he fights Bret Hart, he comes out dressed in his Hunter Hearst Helmsley attire and to Ode to Joy, even doing the same snobberish mannerisms. So when did the change happen?

This one is pretty tricky to pinpoint. I remember Ken Shamrock would call him Hunter Hearst Helmsley way after everyone else stopped though. Shamrock was doing that up to at least some point in 1998.

That is also tricky. I'd say he stayed with some vestige of it up until Survivor Series 1997. He and Shawn were kinda DX before then, but after that PPV is when HHH fully became the DX version and got new ring music and everything.

If you watch Hitman Hart: Wrestling with Shadows there's a scene where various members of the circa 1997 WWF roster talking about their gimmicks and Hunter is giving his "their boos become cheers" spiel, we see him slam Ken Shamrock to the mat and backs up into the corner and gives a crotch chop. This wouldn't be so odd if it wasn't for the fact that he was still wearing the fox hunting breeches-style tights from his "Connecticut Blueblood" phase. Which makes it look kind of awkward.

I was pointing out that Shamrock kept using that name long after everyone else did. If you notice HHH hasn't been call Hunter Hearst Helmsley in a LONG time. It's always Hunter, Triple H or one of his billion nicknames. If Hunter Hearst Helmsley has been used any time recently it's probably only been done as part of a joke.

He still had the music and attire when he wrestled Undertaker on Raw before Badd Blood and I think he still had it when he beat Bret (via countout) on Raw.

After his KOTR win against Mankind, he seemed to drop a lot of the blue blood stuff and show more aggression (!) although he kept the name and robes etc. I think at this point, Triple H was just Shawn Michaels nickname for him.

The name was definitely still in use during the original version of the Authority, the "McMahon-Helmsley Regime". The "divorce" angle was what, 2002? So the last vestiges of "Helmsley" would have finally been gone by then at the latest (Though I think she actually dropped the "Helmsley" from her name during the Invasion).

Wasn't he still wearing the Hunter Hearst Helmsley ring gear, jacket and braided hair until after WrestleMania 14?
He probably didn't ditch the entire Hunter Hearst Helmsley package completely until he turned heel in 1999. Even when he turned, he still had the dumb braided hairstyle.

If anything, he more dropped 'Hearst' from his name as he still gets called Hunter and Helmsley was last used in 2002.
Clothing-wise, somewhere in early '98.

When he started lightening up from the snob-turned-aggressive snob at the beginning of DX, was as best I recall, noticeable around the time they started feuding with Commissioner Slaughter and humiliating him every week.

I just thought it was weird he was doing DX promos with Shawn at the beginning of the show, and then in the Main Event against Bret, is still dressed as the Blueblood and even comes out to Ode to Joy. Quite Surreal. Sorta like when the New Nexus was still coming out to Punk's theme leading up to MITB 2011 and Punk was listed as being part of them when they weren't even acknowledged in his feud with Cena.
