I think Undertaker has one match left that he'd want. Who it is against I have no idea but I can't imagine the lasting image of Undertaker on screen is losing the streak and just walking out. His character has evolved now to wanting redemption - hence him challenge HHH to the Hell in a Cell match despite winning the previous match as he felt he wasn't at his best.
He wins one last match, goes out as the WWE's soul and he can appear back for sporadic guest appearances without the need for the WrestleMania match.

Doesn't 'Taker have a co-ownerd real estate business on the side? I know I read that somewhere. If he's retired, he can just continue out his golden years doing that. He doesn't really need to work, but I think he finds that relaxing.

I meant after their second WrestleMania match that he won, HHH cut that promo saying he won anyway and Taker was the one challenging for the Hell in a Cell match despite winning the match previously because he wanted to redeem his performance. That character trait makes me believe we've got at least one more Undertaker match. I can't see WWE's Heart and Soul character just leaving after being squashed to end the streak. Not to mention Undertaker's retirement has to involve druids and some sort of special effects bonanza.

I don't see why a Taker/Cena match at mania is a bad idea now.
In fact it seems more interesting without the streak since you can't just write down the winner in advance.

There are a number of compelling options depending on how much Undertaker wants to still/can still go.
The Sting match I actually am not sure I want to see as I think for either to have a classic match now at their age they need to be up against someone younger or a really good worker to help mask their veteran status.
For me the redemption angle is most certainly the way to go, as there is no way you can end the undertaker story with him just walking out defeated like that (as others have said). This means there has to be a Brock rematch at some point - I would go with Summerslam - and I would have Taker lose again.
This then leaves Taker doubting himself, and this then gives him only two targets: the world champion Daniel Bryan and/or John Cena the face of the company. I think one or the other rather than both, with him challenging them to a match at mania that if he cannot win he will retire.
For me Cena v Taker remains the iconic mania match yet to be done. Some of its shine is gone without the streak on the line, so why not put both of their careers (or just taker's) on the line instead to add a bit of spice? Or you could do an I quit match - but I think this adds more limitations to the match/reduces possible outcomes.
I do also think Mania 31 should be his last, so whoever he faces could be the man to officially finish the Undertaker - and I really like the lights going out and there being nothing but an urn in the ring when the light returns idea as well. It would be be a huge rub for someone like Bray Wyatt, or cement Daniel Bryan as the man if they went down that route, but my preference is still to see taker face cena at mania if he only does one more.

Bray Wyatt should slowly over the year become the all-powerful monster heel in WWE.
It should be revealed has been controlling Corporate Kane as a power grab.
Taker should announce that he's retired in the few weeks. Then come out of retirement to fight the Wyatts and save his brother.
Bray should threaten to do the same to Taker that he's done to Kane.
Bray vs. Taker at WM31
Taker wins after Sting saves him from Harper and Rowan's interference.
Sting, Kane and Taker stand together. Fight the Wyatts again in a six man tag.
Then after the feud ends Sting calls out Taker for one last match at Survivor Series.

Without the streak, he isn't a marque character any more. Unless he has one more full time run in him to do a proper retirement angle, there really is no real need or money to be made in having him back.
A random exhibition match vs Sting wouldn't even mean anything now because all the mystique and wonder around Undertaker at 'Mania has been served up to Quitty McGivemeMoney and wont generate the same level of interest that a streak match has or would have.

Why should Taker go out on a win? Wrestlers go out on their back. Nothing is gained from a wrestler winning his last match.

Taker could barely even move well during his 'Mania match with Brock, it was almost a bit sad.
So I kind of hope he just retires and gets inducted into the Hall of Fame next year.
