During the Invasion, when Kurt Angle did the riff on Stone Cold's beer truck and rode down in a milk wagon...at one point, he started chucking those pints of milk you got at the school cafeteria at people in the ring and they were selling them like he was lobbing grenades. Granted, he was winging them pretty hard, but the idea of using cartons of milk as a weapon shows just how great Kurt Angle was.

A VCR, and one time, a keyboard, sending keys everywhere on impact.

I recall in 1998 or so, on WCW Saturday Night, Ray Traylor pulling a frickin' BICYCLE out from under the ring (complete with training wheels) and trying to choke someone out with it...and Dusty on commentary going "Tony! HE GOT A BICYCLE! HE GOT A BICYCLE! LOOK AT DEM TRAININ' WHEELS ON DAT PLUNDA!"
I promptly laughed so hard I cried.

I'd have to go for Dreamer hitting Raven with a Blueberry pie. Pitbull 2 did the same thing to Shane Douglas with a Pumpkin pie

I forget who Bradshaw was facing on this particular episode of Heat, but he used a kayak paddle. I've seen crazier, I've seen more hardcore, but this always stuck out to me.

One of the funniest things I saw happened years ago New Jack layed the guy out, pulled out a Godzilla toy. Layed it on the guys crotch. Then pulled out a vaccume and acted like he was cleaning the ring. then hit the guy in the crotch with it. I know not as weird as the other stuff but mentioned but NewJack "cleaning" the ring while his music was playing was so damn funny to me. New Jack used one of those old, vibrating Electronic Football Games on somebody once. Can't remember, but it might have been at a PPV.

New Jack had crazy stuff in his garbage can that he brought to the ring, like:
a kitchen sink nintendo console toy lawn mower

This set up a four-way tag title challenge at the next ECW show. New Jack (going to each corner of the ring): "Put the Eliminators...right here. (Next corner.) Put the Bruise Brothers...right here. (Next corner.) Put...those sorry (mofo's) rejects from the WWF....right here. (Last corner.) And, put the real badass (mofo's) right here!"

Not necessarily a weapon, but I saw a compilation vid of this Indy wrestler who springboarded off of a huge fat guy standing at ringside... I thought that was pretty insane...
