Best 2/3 falls matches always seem to have the eventually winner jobing the first fall than winning two in a row. Wouldn't it shake things up to have the eventually winner job the second fall and win the third? Or is there some sort of kayfabe thing that the eventual winner needs to defeat the loser twice in a row to look good?

Austin vs Trips, and HBK vs Trips, both times had Trips win falls one and three. Foley vs Flair had Foley win the first 2 falls.

The Austin-HHH match from No Way out had Austin winning the first than HHH winning the second and third. It's not always the case but it seems to be at least 70% of the time and I don't know why, it kinda bothers me

It depends on how it's done really. With Austin/HHH, it made sense to the storyline (Austin wins HHH's match, HHH wins Austin's match) and HHH "won" at the end.
I can't think of many 2/3 matches off hand, but i'm sure there's examples of it not happening.

Ah, you're right, Austin/Triple H did go 1-2-2. I remember now, Austin won the first fall and it was all important cuz he like, had the goal of beating Triple H in a standard one-on-one match, without a stipulation or weapons or anything.

I thought it was something like
Singles Match: Breaks the spirit Hardcore Match: Break the bones Cage Match: Beat up whatever is left
Then again this was from Trip's view.
