I saw The British Bulldog win the Intercontinental Championship at Wembley Stadium.
I also saw the Kid Rock mini-concert live!
I saw The Ultimate Warrior pin The Undertaker at Wembley Arena in 1991. It was a big moment because it didn't really happen according to WWE, seeing as how they said 'Taker was still undefeated six months later.

I too was there for the HBK/Cena 50 minute match. I was about four rows behind JR and King. Oddly me and my mate didn't think it was the classic it is now said to be at the time. It was great no doubt about it, but I recall us being pissed off that we didn't get the Edge vs Orton main event they advertised on the tron just before the 50 minute match. It was only reading reviews of the match afterwards that we realised we might have witnessed something special. Also on the same show Shane McMahon did a coast-to-coast, Jose Mourinhio got booed and Trevor Murdoch tried his first Canadian Destoryer and botched it. I have also seen Michael Cole get knighted. Was also there for Cena/HBK, and was so frustrated that I didn't get to see Edge wrestle. I was a bit further back up near the top, right behind a little kid who cheered the whole way through for Cena. His enthusiasm was probably the most entertaining part of that match, which seemed like nothing but rest holds for the most part. I remember really enjoying the WGTT/Cryme Tyme match from the Heat taping beforehand, though. And yeah, seeing Shane to the coast-to-coast (on Robbie Brookside, no less) was pretty awesome. Also, not WWE, but I was there the night Derrick Bateman/EC3/Michael Hutter returned to the indies after his stint with WWE. I recall yelling to Shelton that he should go to TNA as I was frustrated at his lack of direction and he glared at me lol. I also saw Chris Jericho get a DX glowstick thrown into his head by a fan causing a few more hundred glowsticks to be thrown at him too. I was also there for an NXT Smackdown show where they all had a promo-off. We cheered Bryan loudly much to the confusion of everyone around us. Wadw Barrett won with his "winds of change" promo, but Ryback was the most over with his "yip. yip." catchphrase. If only Bryan had a three letter catchphrase eh?

-Raw 1000 -Referee Tim White's last match (Judgement Day 2002) -Edge's last match (WM 27) -Raw is Necrophilia I thought Tim White's last match was at WMXX? Was it? I remember him having that spot where he got knocked into the cell and I thought he retired after that. Upon further research, you are correct.

HBK vs John Cena RAW match in London in 2007. Ring announcer said after the match we just saw one of the greatest RAW matches ever and WWE indeed voted it as Number 1 a few years later.
Apart from that not a lot the UK shows not generally lead to memorable moments. I was lucky enough to see Steve Austin live in the UK in May 2002 against Scott Hall and considering he retired less than a year later I'm grateful for that. I was also there for Edge's last UK tour when he lost on Smackdown to, erm, David Otunga.

I was present at Monday Night Raw in 1999 when Triple H revealed he married a roofied Stephanie McMahon in Vegas.
I saw Austin win his second Royal Rumble (98) & I saw HBK break his back in the Casket Match vs. Taker.
I saw the legendary I Quit Match between Rock & Mick Foley & I saw McMahon win the Rumble (99)!
I saw the Iron Man Match (WM 12) between HBK & Bret Hart which was HBK's first title win. I'm the biggest HBK mark out there so that was huge when I was 10. Taker vs. Nash was a dream match for me too.
I saw Stone Cold's last WWE match before his retirement (WM 19) & I got to see the only McMahon vs. Hulk Hogan match.
I saw Cena's first WWE Title victory & Batista's first World Heavy Title victory (WM 21). Not to mention Edge winning MITB, HBK vs. Angle, & Orton vs. Taker & Eddie before he passed...
I saw the Yes Movement push Daniel Bryan to a very deserving second WWE title victory & I saw The Streak end (WM 30).
I saw Y2J beat Stone Cold & The Rock in the same night to become the first Undisputed Champion of the World (Vengeance 2001).
I got see CM Punk send off Jeff Hardy in the last high profile TLC match we've seen in a long time (SS 2009). I also saw the return match of DX for HBK's last run.
I got to see Punk vs. Cena II in the Summer of Punk for the Undisputed WWE Title (SS 2011) & the near botch of the Summer of Punk which included Nash & Del Rio's Cash in.
I got to see Brock vs. HHH II at (SS 2012) & I got to enjoy seeing CM Punk retain as he was gaining ground as a heel as WWE champion for his long title run.
Honorable mention: No Way Out 2007 & Unforgiven 2002. Nothing really revolutionary on these shows - but a good build to two different Taker rivalries (Batista & Brock Lesnar).

The first Buried Alive match
The return of the Ultimate Warrior (WM 8)
But my personal favorite:
The Rise & Fall of the SHIELD (both happening in Indianapolis, IN)
EDIT: Since we're also throwing in non-WWE, I was at Daniel Bryan's first indie show after Tiegate (CHIKARA). I'm also the guy responsible for buying all the ties you saw during that match. Ties > Streamers

The Undertaker beats Sycho Sid for the WWF Title
(Too easy to say Bret-Austin WM 13, even if it is the best match I've ever seen. Let me be different.)

I was there -- at the Silverdome!!!! -- when The Streak ended and Daniel Bryan won it all at WM30.
Also when Edge made his "surprise" return (yeah, we all expected it, but I was there!) at the Royal Rumble.
I was there for what I'm pretty sure was Jon Moxley's last indy match (Atlanta before WM) before joining WWE and emerging as Dean Ambrose. Brodie Lee (Luke Harper) was also on that show.
