The real answer is that Vince is one of those guys that wakes up at 6 AM and goes to bed at 2 AM, and spends almost all of that time working. He probably doesn't have too many days off, and probably wouldn't know what to do with such a thing.

From listening to Triple H's interview with Jericho that is essentially what he does. Based on every interview I've heard of Vince, he is a borderline workaholic.

It's not really full-time job. What I mean is that other than twice a week (3 days on PPVs) he isn't obligated to do anything or to be anywhere. He regularly held production/TV meetings at home for example. So he might have theoretically a lot to do but he can do it whenever he wants and spend as much time on it as he wants and can be as hands on or hands-off as he wants.
For things like NXT, Total Divas etc I'd be surprised if he was involved in any major way beyond giving final approval/kept up to date with what's going on. For TV tapings his involvement can be as intense as he wants. He can either insist on writing the whole show or he can just ask for a final review of the script.
Either way I can't imagine he doesn't have a hell of a lot of free time. It's why I don't think he'll retire until health reasons force him to - because it's not a job it's more a hobby. He still probably gets all day Wednesday through Sunday(non PPV weeks) to do what he likes and maybe dip into production meetings as and when he wants to.

Meltzer has said before that Vince runs on almost no sleep on days where there's TV, and then basically spends an entire day sleeping to rest and recharge.

I'd like to think he has reduced his schedule slightly with being a grandad, sitting through Frozen like some I know (only film of the 2000s Vince has probably seen!)
But he does seem to love his job and wants to be involved in as much as possible. I imagine there is a lot to do outside of talking about TV (although it takes up most of his time) in Stamford. He will have department line managers like most companies do but I think he'd want to be just as approachable with his employees as he is with the talent. I read somewhere (it might have been the transcript from his government grilling in 2008) that Vince said he tried to sit in as many meetings as possible but doesn't have the time to go to them all, like meetings to discuss the WWE building's facilities management.
