Some random choices:
Taz vs.Kurt Angle: Royal Rumble 2000. Not a great match by any stretch of the imagination and it was probably less than 5 minutes, but I've always been a fan of Taz and it was really gratifying to see him get a hero's welcome and get to be badass ECW Taz on a big stage, even if it was more or less only for one night.
RVD vs. Cena: ONS 06. Awesome atmosphere and Cena trolling the ECW faithful was tremendous.
Taker vs. HBK: WM 25. About as perfect of a match as you're likely to see from the WWE.
Bruiser Brody vs. Ric Flair: Not sure of the exact date but it was a 60 minute match from St. Louis in 1983 or so.

I'll just name my one favourite match.
Bret Hart vs Steve Austin at Wrestlemania 13. It wasn't even the culmination of the feud, because it would continue. It wasn't much of a clean finish, it was one of those pass out deals that a bunch of guys have had while facing Rusev. But everything going into it, with Bret Hart feeling mistreated, Steve Austin getting cheered despite being the asshole to Bret, the double turn, and even though Steve Austin was the sympathetic baby face by the end of the match, he still had that mean streak in him after stunning the referee. It's getting late and I'm going to bed soon, but that's the best match I've ever seen.

What made that great is being there live and hearing guys who cheered Bret at the beginning start to boo him later on, without the benefit of having the announcers sway their opinion. THAT'S great storytelling. Other favorites (random order): Tito Santana d. Greg Valentine in a steel cage to regain the I-C title. Yeah, I caught this on YouTube and it kinda sucks. But in my 10 year old mind watching it on Prime Time Wrestling, Tito climbing up and kicking the door in Valentine's face and winning the belt (after Valentine crippled him with the Figure Four in 1984) was the greatest thing ever. The British Bulldogs d. Greg Valentine/Brutus Beefcake to win the WWF Tag titles at WM 2. Chicago obviously had the better segment, and this put it over the top. I still mark for the Bulldogs to this day for their combination of speed, technical savvy and power. My favorite team and this is my favorite match. Bulldogs drew with the Rougeau Brothers, SummerSlam '88. I loved this match, two of my favorite teams. (Imagine how big it would have been had we known the backstage issues between the two teams.) Dean Malenko drew Eddie Guerrero, ECW's Hostile City Showdown 1995. Great match that introduced me to two pure greats. And the Double mask vs. double hair match from the AAA When Worlds Collide PPV (mentioned earlier). This is where great announcing helped enhance a match. I knew next to nothing about Hijo Del Santo and vaguely knew of the others. (Art & Eddie made short stints in WCW, not at the same time. Octagon I've seen before - couldn't tell you where - and liked his work.) But Mike Tenay and Chris Cruise gave us the backgrounds, built the match, clued us in on everything going on and made it that much more exciting.

Hogan vs Savage, at Wrestlemania V, because it the Mega Powers was the greatest wrestling storyline ever written. It was actually a story that spanned three Wrestlemanias, because the whole thing began with Andre turning on Hogan, Hogan beating him at Wrestlemania III, Andre and Dibiase stiffing Hogan out of the title, which led to Wrestlemania IV and Macho winning the title with Hogan's help.

Savage vs. Warrior, WM VII: remember my mom renting me this show from the video store when I was super young and being blown away by this match. I haven't seen it in forever, so I don't know if it still holds up, but I was a little Warrior mark and this was my first exposure to the stuff he did before his brief 1996 run.
Rock vs. HHH, Backlash 2000: Two of the biggest pops you'll ever hear (glass shattering and Rock winning). When I think of the "Attitude Era" this is one of the matches that immediately springs to mind.
I may edit this post later and put some of my other favorites in.

Cena/Umaga: Royal Rumble 07. Absolutely fantastic brawl. One of, if not the best last man standing match I've seen. Umaga lost, but the ending put him over as a beast.

Owen Hart vs Bret Hart Wrestlemania x
This match was near perfect. A good story going into it. Brother vs brother. In storyline Owen was not considered as good as Bret and was the massive underdog. But he said he would win.
This match opened up Wrestlemania! They knew each other so well. It wasn't the longest match but everything they did in the ring came off so well. To top it off Owen wins by outsmarting his brother.
This is my favourite match ever.

HBK vs Undertaker WM25 - To me that match was proffesional wrestling in it's purest form.
Vince vs Shane - The ideal "Sports Entertainment" match for the want of a better term which should serve as the template for all such matches, it was fun, character driven and all the crazy elements built to a crescendo.
AJ Styles Vs Christopher Daniels vs Samoa Joe - Came along at just the right time for me, their whole feud and inventive matches plus The Wrestling Channel in general reignited my love of wrestling.
The Shield vs The Wyatts - Everybody played their part to perfection from the first "this is awesome" chant to take place before a match had started to Ambrose disappearing into he crowd. It'll be interesting how history judges it without the hope that the six men involved plus Bryan and Cesaro were about to usher in a new era during a time the fans were in open revolt. Even now it seems so long ago now and so out of place as only two of those eight are still going strong due to injury or bad booking.
Rock vs Austin WM17- Two of my favourites ending the attitude era, I'll probably never be as hyped for a match again.
Of course my top 5 could be different tomorrow. Hell it is right now as I really should have included HHH vs Cactus Jack Street Fight.

Absolute perfection. Wrestling would blow boxing and UFC out the water if it was like this all the time.

Flair/Perfect (Loser Leaves Town) - This had me on pincushions as much as any match ever did. Was a huge mark for babyface Perfect and there was just no way Ric Flair was losing because, y'know, RIC FLAIR.
Yokozuna/Tenta (Sumo Match) - Not a good match by any means, this is similar to the above in that I was a mark for John, but I also knew his WWF career had already peaked while Zuna was still as A-list as WWF got at the time.
Roberts/Martel (WM 7) - Again, not a "good" match, but so much fun and well-executed in humor (the only drawback is that the feud itself was much more serious in tone)
Punk/Cena (Raw, their final match) - Just a beauty to watch.
Punk/Cena (MITB) - And this was just electricity personified.
Goldberg/Hogan (Nitro, Georgia Dome) - For once, everything fell into place and every single person involved did a magnificent job and exactly what was needed.
Windham/Anderson vs. Doom (Street Fight) - good lord, so much fun. Neither team ever looked more credible or badass than here.

Dean Malenko versus Chris Jericho Slamboree 1998.
The crowd freaking EXPLODED. It was the culmination of a scorching hot under/mid-card feud. And the announcers did a great job. Even the bit where Juvie took himself out of the match with the vibe of "Kill him Deano!"
