I was about to say the Angle/Holly match too.
Angle also wrestled Essa Rios on an episode of Heat
Chris Jericho wrestled Yoshi Tatsu and Goldust on Superstars
Miz had a pretty good 13 minute match with Alex Riley on Superstars in 2012 (I'd still consider Miz a main eventer at this point since this was before he started chasing Midcard titles).

There was a time in the late 80's and early 90's that they were having better matches in WCW on the syndicated shows (Pro, Power Hour, Worldwide) then they were on WCW Saturday Night, which at the time, was its flagship show. Just the other day, I watched a lengthy Arn/Windham vs. Lightning Express match from Worldwide, followed by an episode of WCWSN that had 12 f***ing squash matches. I get that back in that era, TV was more about selling the live events than promoting PPV or TV itself, but still god damn.

The WWE does this all the time with any debuting C/D show. Once they realize the ratings will be low regardless of who is wrestling, they take the main eventers off and stick the low card acts on there, and pretty much forget about the show existing.

I remember HHH facing Hardcore Holly on Heat around 2000 I think, the setup was a backstage segment between them on the same aswell, where Holly said he didn't want a title shot he just wanted to prove he could kick his ass.

Triple H did a few Heats, since I recall him wrestling Perry Saturn on one for some reason. I remember that too, think that was during the Benoit feud because HHH was pretty much a face on that episode. Didn't last though.

I seem to remember Benoit, Regal and RVD all featuring on Velocity a fair bit around 2005/2006. Regal vs Benoit was fantastic. A bit of an aside but the London vs Aiko feud was great around then too, good times. Does NXT count for this? Neville vs RVD is likely to be one of those "that happened?" matches in years to come.

I'm counting it as he was involved in a show-dominating stable: Randy Orton defended the IC title against Val Venis on a 2004 Heat. It caught me off-guard, as I'd often just leave Heat running in the background.

I remember one episode of Heat in 2000, I think, that had Benoit vs. Jericho vs. Venis vs. Hardcore Holly for the Intercontinental Championship, and I believe Eddie defended the European title against Crash(it may have been non-title...). I remember it because WWE.com hyped it up a fair bit that week.

I think they were WWF Jakked and WWF Metal Metal was what I called "Big Bossman Main Event Of The Week", because it seemed like he was the last match on every episode. Essa Rios would be the "main event" on Jakked.

London vs. Akio feud was brilliant and actually my stand-out memory of this period. Velocity was free to stream in the UK on WWE's website and I wasn't getting Raw or Smackdown at the time, so 2005 WWE to me is London, The Pitbulls and Kazarian.

Jericho's done quite a few.
He had a great match on Superstars with Goldust in 2010 while he was WHC. I believe his first match against Morrison was on there, too. He also had one with Punk during Punk's run with the SES. Nobody seems to remember that one, but I recall it being good at the time (haven't seen it since).
Jericho also came to WWECW once to face Christian, who had just returned earlier that year. CM Punk tag teamed with RIC FLAIR of all people on WWECW, too.
I remember Owen Hart vs Goldust from '97 on Shotgun. I believe it was one of their matches (they had several) where Bret Hart came out. I thought that was pretty surprising to see, as Bret was one of the tiptop guys of 1997.
EDIT: Oh yeah, Jericho's first match against Bray Wyatt was actually in NXT in 2013. CM Punk & Seth Rollins actually had a match against Antonio Cesaro and Kassius Ohno on NXT in 2012. They filmed the match I think, so maybe the full thing beyond fancams will turn up one day, but it was never actually televised.
