I think just a normal episode, but maybe they could present the last season with an arc. Maybe Meg gets married or Chris goes off to college, Meg is the only character who ages, so you can do something there. They play so fast and loose with the characters, they're more into a Ren & Stimpy style "everyman" for the characters now, there's not a huge emotional attachment to what happens to the characters when they're not around anymore.
Or they'll mash up a few different finales.

Steal the alleged ending Sam Simon wanted for "The Simpsons"- the Griffin family gets in their car- and it ends with the opening where the Simpsons are driving to the school at the beginning of the first Simpsons Christmas Special. ...and also Family Guy would end before The Simpsons does, so double the points. I thought Al Jean wants to do that ending? Possibly- I may have forgotten which person, IIRC.

Brian tries to run for Quahog mayor, but he loses in a landslide thanks to Stewie using the time machine to prevent him from winning, as it would result in the town going to hell in a handbasket. As a result, Brian finally learns some humility.
In the subplots, Lois puts Peter back in kindergarden (he fits in with the other kids), Chris's art sells for a bunch of money, Meg finds a steady love interest and Quagmire finally goes to jail.
In one brief scene, random South Park lookalike characters are graphically killed.

45 seconds into the final episode we get "Ladies and Gentlemen, Mr Conway Twitty" and that closes the show

Everyone is recast with hobos.
Surprisingly the most coherent one is the voice of Meg. Also the one voicing Brian, oddly/funnily enough, goes into a racist diatribe about the President.
One of them vomits terribly during a cutaway sketch, and it carries over into the next 2 scenes.
And then there's a bum fight to end the episode, during which we hear at least 4 of them brutally killed.
The episode is quickly removed from the air........3 minutes in. FOX goes dark for the rest of the timeslot.

*cut to black*
Show never comes back, the plot of the episode never picks up again, that's just it.

Meanwhile, Matt will be kicked by the celebrities he didn't kiss the ass of enough the last 15 years.
