And conversely, Sports-Entertainment is never used outside of WWE's corporate vernacular. I have actually heard it used to describe other things before. Not wrestling but other things that fell into the quasi-sport aspect of things like Wrestling.

Not wrestling but other things that fell into the quasi-sport aspect of things like Wrestling. To me, Sports-Entertainment is any sporting event where the focus is more on entertaining than on the competition. There's varying degrees of true competition among all types of sports-entertainment though. The term is subjective after all. That being said stuff like the Harlem Globetrotters, the Crusty Demons, the Nitro Circus & some roller derbies and demolition derbies should fit under anyone's umbrella for the term (since they're almost exclusively about entertainment). Beyond those definites, you could argue that tons of different sporting events fall under the "sports-entertainment" umbrella: American Gladiators (and all of it's rip-offs), Mud Wrestling, Foxy Boxing, World's Strongest Man, MXC, American Ninja Warrior... even Double Dare could apply. Hell, if you want to get really picky you can claim the NFL since they've been specifically re-writing their rules to fit around television viewing schedules.

I dunno, "adult entertainment" always seemed like them wanting a more official sounding name than "porn" to describe it. I've seen pornstars call it "porn" all the time on Twitter and stuff. WWE only wants "sports entertainment" to be a thing so they can try to avoid whatever fake social stigma Vince is afraid of.
