When Heat started it was on par, if not better than most RAW shows. And the build they created for RAW was great. They would have you pumped for RAW the next night with a cool brawl or a nice cliffhanger before the PPV that same night.
As mentioned earlier, WWE weekends used to be great before the over saturation.
Livewire on Saturday mornings, Superstars on Sunday morning and Heat on Sunday night.

I vote Heat, simply for Stevie Night Heat.
Though, the early episodes of Shotgun were awesome.

It's amazing that at one time, both Raw and Smackdown had their own B shows.
Now Smackdown is the B show. Lame.

Sigh, I miss weekend WWE. Saturday mornings on Sky One used to be SmackDown followed by Livewire, which was replaced with Bottom Line after the brand extension. Sundays were Metal then Superstars. Superstars became AfterBurn, and Metal was a SmackDown exclusive show until the change from WWF to WWE and Velocity replaced Metal. Then it disappeared from Sunday mornings and moved to nights for a few years. We did get Heat on Sky One in 2003ish, and remained in the Sunday morning slot on Sky One/Sky Sports until it ended in 2008. Velocity came back to Sunday mornings in its last few months, and was then replaced by ECW. Though someone complained about an image in the ECW opening graphics and it got taken off Sunday mornings, and shown after the watershed. Pre-PPV Heat was great. Back in the days of the VHS, I'd record the Heat and the PPV and watch it when I got home from school the next day. Oh, and 2000 Heat on Sunday afternoons on Channel 4 was outstanding!! Superstars and Metal used to have the exact same matches even though they aired one after the other. I also liked how they taped UK specific commentary for heat where they'd refer to Raw as happening on Friday and Smackdown as Saturday

Velocity. There was some seriously great matches in Velocity. Mostly Paul London vs. Akio though.

Velocity by a country mile. Back in the day my friends and I would be hanging out having some beers on a Saturday and if we were anywhere that had a television id tune it into Spike and we would watch Velocity. It was great because there wasn't really any storylines to follow so everyone would just watch the action and enjoy it, considering they weren't really wrestling fans it worked wonders. The cruiser weights were always the highlight for everyone.
Damn I miss those days...

Shotgun Saturday Night really hooked me in as a kid. I know a lot of it seems awful in hindsight, but at the time this was groundbreaking stuff for me.
Marlena "flashing" her breasts, Terry Funk cursing out Steve Austin, Vince McMahon and Todd Pettengill, Ahmed Johnson Pearl River Plunging D'Lo on the hood of a car, Rob Van Dam coming from ECW and teaming with Jerry Lawler, Sunny's sex tape with Elmo, The Flying Nuns, absurd graphics boasting things like Triple H's "pits don't stink" or Savio Vega "had a bad day", and ESPECIALLY The Undertaker Tombstoning Triple H in Grand Central Terminal - I thought that in particular was the coolest thing ever as a kid.
However, as far as match quality goes, Velocity definitely gets the nod there. These four matches are right at the top of my list of underrated gems:
May 1, 2004 - Rey Mysterio vs. Jamie Noble December 4, 2004 - Paul London vs. Akio February 12, 2005 - Paul London vs. Akio July 16, 2005 - Chris Benoit vs. William Regal
So Shotgun for nostalgia, Velocity for match library.
**Edit: I know there was another London/Akio match in between the two I listed; I'm just much more of a fan of these two.

Velocity was that one bastion of solid wrestling during that point in 2005 when WWE's in-ring was particularly plodding.
Heat had a little more identity, especially in the MTV days. I still fondly remember Tazz's ridiculous Thanksgiving turkey segment.

Heat stands out to me more. I remember a more unique aesthetic to it. Also Big Bossman ripped Droz's F-ing nose ring right the F out and put it on the commentary desk. X-Pac got glass underneath his eyelid. Don't remember much about actual match quality though.

Sunday Night Heat, used to get me so hyped for the PPVs. Its original theme when it was on USA is still one of my favorite show themes.

There was a period around 2003 where Velocity was pretty consistently awesome with at least one badass cruiser match each week. Used to love Velocity This is why I voted Velocity too. You were always guaranteed some awesomeness from Paul London, Jamie Noble and the like. Both Velocity and Heat were great during the invasion as I recall, but the awesome cruiserweight matches make Velocity must watch for me.
