Just got done playing the Telltale Game of Back to the Future (yeah 5 years late to the party there) and I thought it was a great continuation of the movies. For those clamoring for BTTF part 4 I recommend this series of games .. Although it's quite simplistic compared to the current crop of Telltale episodic story games. What are examples of things like this being continued in other formats? Good or bad. The obvious answer is the Star Wars expanded universe feature in a lot of novels, comics, and videogames. My best example is Ghostbusters the 2009 videogame. An action game that takes place in 1991. Features most of the original cast (all Ghostbuster actors, Annie Potts, William Atherton and even Max Von Sydow in a Vigo easter egg) in a original story where the Ghostbusters are hoping to expand into a franchise and hire a new recruit (the player character) just as ancient evil* starts haunting New York. Like with BTTF above this game is pretty much Ghostbusters 3.. But with the new film coming out this year I'm not sure they are going to consider it canon now. Anyway it's a fun game as well. You can probably get it real cheap now these days. {Spoiler}Shandor, the occult following Architect mentioned in the first film.. Also explains why a bunch of events similar to the first film occur in the game.

BUFFY, ANGEL and SMALLVILLE have all continued on as comics. I believe BUFFY is up to Season 10 now. ANGEL's continued a few seasons at both IDW and Dark Horse. Whedon's overseen both series, and Bryan Q. Miller (head SMALLVILLE writer for the last couple seasons) wrote those SMALLVILLE books.

Yeah, it was going on in the comics at the time of the cartoon, but after the cancellation it was exclusively the Archie comics.

Speaking of SW what they didn't finish on Clone Wars they manger to finish the Maul Arc in the Books/Comics

Star Trek Online continues the "prime" universe following the destruction of Romulus and Remus and the disappearance of Spock, and features a healthy number of returning characters (McCoy, Data, Scotty, Janeway, Torres), including some voiced by their original actors (Spock, Worf, Tuvok, Tom Paris, Seven of Nine, The Doctor, Tasha Yar, Sela, Leeta, Nog).
Firefly/Serenity was continued in comics, which were written by Joss Whedon and are canon.

I was going to say the Ghostbusters IDW comics series, which canonically comes after the video game and is really, really good.

Big Finish's audio plays for Doctor Who after the series was canceled might be the most triumphant example of this, even more than the comics and prose from the DW expanded universe.

"Jericho" continued in seasons 3 and 4 as a comic.
And I think there were a few digital comic issues continuing (ending?) the TV show Revolution after it was cancelled.

Nearly all of the IDW properties have been done well. The current Transformers ongoing pair are quite arguably the best, freshest interpretation of the G1 universe ever, and that's pretty much the 'true continuation' you'll get for that era.
