One that I don't think gets enough love was Mankind's original post match theme. Possibly my favourite piece of music that WWE has ever produced.

Both of Jake Roberts' themes in WWF. Especially his heel "Trust Me" theme from late 1991 to Mania 8 in 1992. A few others:
Sting's first Crow theme from COTC in August 1997. All of Vader's themes from WCW, especially "Heavenly Thunder". Every single one of Sid's themes from WCW and WWF. Stone Cold's "Hell Frozen Over" theme from late 1996 to the fall of 1998. Eric Bischoff's WCW theme Hollywood Hulk Hogan's Theme RAW is WAR theme (Thorn in Your Eye) Ultimate Warrior's WWF theme Lex Luger's NWA/WCW theme from late 80's to 1992. Bret Hart's second WWF theme Razor Ramon's WWF theme

Demolition -- How can you not go wrong with this great theme? It is everything that Ax and Smash were meant to represent.
The Fabulous Rougeau Brothers -- Sure it is over the top and campy as hell but it is great!
Orient Express -- In spite of its simplicity, it is catchy.
Midnight Express -- How can you go wrong with that?
Jake Roberts -- Like Demolition it fits the character perfectly.

Most of the classics have been listed, so I'll say I always thought Tazz had a really cool theme in WWF.
And since several people have listed "Cult of Personality", I'll throw in "Natural Born Killaz" for The Gangstas/New Jack as well.

A lot have been mentioned already but I also have to say I loved the 4 Horseman theme from 1996-1997. Benoit used it quite often alone too rather than his own theme, he seemed to flip back and forth.
