I've been a huge fan all my life. In fact, my dad says the original is the first movie I ever saw in the theater. However, as many times I have seen the movies, and as excited as I get for a new one, I've never really followed the EU. I do read the Marvel Darth Vader comic, but that's about it.
My question is, by not watching Clone Wars, reading ALL the comics or novels, etc. am I really missing out? For example, are there essential parts of Star Wars lore I'm not experiencing, or is it more like glorified fan fiction?
Also, is there anyone out there that really follows all of it? Or do people just cherry pick what interests them? If so, how do you know which stuff you will like and will be important to the saga, and what won't be?

you can get a HUGE amount of backstory and details reading it, since i'm doing research for my fan fiction which is part of it, just reading the history of characters can really give you a sense of epicness in the universe!
add the games lore into it and there's years worth of reading

A lot of the post ROTJ canon prior to 2015 was made into AU following the release of TFA. Same with some pre-ANH stuff when Phantom Menace was released.
In terms of sheer quality regardless of canon, I'd recommend seeking out anything by Timothy Zahn and the ANH and ESB Radio dramas. The former are great stories, and the latter really expand on the characters and setting of the original films.

I think a good follow-up question to help the original poster is to what degree does the EU "explain away" a lot of what attracts fans to the original films. Obviously, midichlorians in Phantom Menace is one such example (which I flat out do not accept as being "true"; I consider more of a "Santa Claus" story to help Anakin or whoever understand).
So, to what degree does the EU actually *expand* versus trying to ruin everything by explaining it away?

as far as midi-chlorians go, that knowledge was lost or indeed kept in mind by vader, as he tried to wipe out any existence of the jedi. so that he alone would be the sole one living ..... it didn't feel tacked on to me as that age of the prequels there was no denial of such a thing, and since qui-gon jinn was somewhat renegade to the ideals, he was rather flippant to this. and anyway, can't have a galaxy far far away a long time ago without some wibbly wobbly weirdness to it

The cartoons actually explain a lot of things and set up events. The Clone Wars series is a bridge of sort between the prequels and the current universe and that expands into Rebels which gives some characters backstory and gives a little sense of what happened to other characters. I haven't read the comics so I can't give any input regarding that but I highly recommend checking out the cartoon series in all honesty

Some of the non-canon stuff is still worth reading, especially if it was by Zahn, Stackpole, or Alston. The X-Wing series of novels, in which the main characters of the movies rarely even appear in, may very well be the best and actually have little to do with space ninja-wizards.
As far as the cartoons go, they do a much, much, MUCH better job explaining and displaying Anakin's fall to the dark side. You don't have to watch them all, but there are many episodes and story arcs that were immensely better than the prequel trilogy, not only that, they make the prequels better because it helps them make more sense.

Clone Wars and Rebels are both excellent and worth watching. The added in Star Wars lore makes them even better. Also a lot of the best stuff from the old EU has been introduced into the new official canon through these two shows, like Grand Admiral Thrawn is going to be a major antagonist in Rebels Season 3. Timothy Zahn, Thrawn's creator and arguably one of the best Legends EU writers, is also writing a brand new Thrawn book that will be in the new canon timeline.
I also personally love the Knights of the Old Republic era (KOTOR1, 2, and SWTOR). I guess it's technically non-canon, though bits and pieces have been canonized by Clone Wars, Rebels, and canon lore info. But then, the games take place ~3950 years (KOTOR1, 2) and ~3650 years (SWTOR) before Episode IV.

Here are the only things that need to be read or watched to gain the full Star Wars experience:
1. Star Wars 2. Star Wars Holiday Special 3. Empire Strikes Back 4. Return of the Jedi 5. Ewoks: Caravan of Courage 6. Ewoks: Battle for Endor 7. Planet of the Hoojibs 8. Droids: The Cartoon Series 9. The Force Awakens
That's it. Maybe the Marvel issues with Jaxxon in them. But really, that's it.

How much of the Old Republic stuff has been stricken from canon vs. what's still there?

Virtually no interest in the peripheral stuff. I have nothing against it, I just don't care about it.

Yeah there was a lot of hte old EU (and EU 2... since again the Disney EU wipe is the SECOND time it happened) had a bunch of really bad fan fiction in it. How much of the Old Republic stuff has been stricken from canon vs. what's still there? Pretty much all of it. But it generally comes down to it's so damned long ago at this point it really didn't matter if it was canon or not.

So the general consensus seems to be to watch Clone Wars and Rebels, check out the other current Marvel Comics (like I said I'm only reading Darth Vader), and even though they aren't canon anymore, check out the Timothy Zahn novels.
Sounds good, Clone Wars will be the next new tv show I binge watch once I catch up on Outcast, Bojack Horseman, and finish my chronological MCU rewatch.

No love for the Shadows of the Empire? SOTE was my shit. I agree, however, with many today that said it was just a cheap cash-grab. They were essentially seeing if people still gave a shit about Star Wars. But I bought into it: The game. The comic. The toys. All of it. Dash Rendar was my dude. Fun Fact: For a while, that's what they considered calling Episode 7: Shadow of The Empire!
