Never seen Fairy Tail so it's easily One Piece for me. It is just full of interesting characters and some great storytelling as well. Not to mention things are constantly developing and everything that happens feels significant. And while it can drag on once you get to the destination it's well worth the wait. Not to mention for a show that is admittedly very very VERY silly, it sure knows how to tug at one's heart strings.
Except the 4Kids dub. That was straight up trash.

I've only seen a bit of Fairy Tail but I've enjoyed it so far. That said, One Piece is awesome.
Oda's art style isn't for everyone but he shows some great range with what he can do with his characters- wacky comedy, gut wrenching sad scenes, intense battles, the works.
He tends to draw his women kinda samey, I'll criticize him there.

God, one of the most overpowered characters in fiction. Defeated apparitions by just STARING at them! I'm so glad it's coming to an end so we don't have to see her ever again. Lol yea she has constant ass pull power ups from nowhere. Let's not forget her battle against the sadistic Kyouka. That demon takes away all of her senses and puts her through blistering pain, but she just gets up and beats the snot out of her, in spite of not knowing where Kyouka is. Essentially forfeiting all drama involving Erza in the future, as if she wasn't already the Queen of Ass Pulls prior to that fight. And, these ass pulls were the main reaosn why Minerva Orlando turned good in the end, in spite of all Minerva did because of her hatred of Erza. It's because she's Erza!

I've only seen a bit of Fairy Tail but I've enjoyed it so far. That said, One Piece is awesome. I will say I refuse to watch the anime tho I stopped idk how long ago and only read the manga.

One Piece. I feel genuine emotion behind characters motivations and it executes its themes and motifs very effectively.
I cannot feel anything with Fairy Tail. I cannot even remember anything with Fairy Tail, like, everything feels literally so forgettable I don't remember what happened a couple chapters later haha.

I have just... never had the patience to want to sit down and read One Piece from the beginning. I did that with the Naruto anime, including the Filler of Doom, and regretted it. With Fairy Tail, I got into it relatively early (I... think? It's been a while.), and I've been enjoying it.
So, Fairy Tail by default.

One Piece for me. One of the things I love about it is that, in a shonen anime, it's inevitable that the heroes will have to get new powers and techniques. And the upgrades the Straw Hats get always seem to be a reasonably logical extension of their pre-existing powers (except for Zoro's Asura and Sanji's Diable Jambe. Seriously, they came out of nowhere, and they've yet to be explained. At least there's some loose pseudoscience behind Second Gear.)
The comparison I most frequently make is to the other "big two" Shonen Jump titles at the time; Naruto and Bleach.
In Naruto, it seems like Masashi Kishimoto spent most of his time coming up with new powers for Sasuke, remembering that Naruto is the main character, and then just giving him new powers so Sasuke wouldn't overshadow him.
In Bleach, Tite Kubo literally just went "here's a new power introduced in this arc! Now Ichigo has it. Now he's gonna use it once, never acknowledge it again, and just go back to spamming Getsuga Tensho." I mean really, at least Naruto came up with new versions of the Rasengan.
In One Piece, there seems to be that aspect of learning. If something Luffy does in battle doesn't work, he tries something else. If it DOES work, he makes it better. When he starts using the Gears, he just uses the same moves that already work, but with his new powers. It's explained how the Gears work (again, loose pseudoscience. Inflating your rubber bones shouldn't make your fist stronger, but we'll let it slide because it's cooler). When he learns Haki, it's explained how that works, and he combines it with his pre-existing moves. Barring the two moves above, few people in One Piece ever really pull anything out of their ass. It can usually be traced back to their already established skills.

Actually, there might be a reason for Sanji's fire powers. {Spoiler}Sanji's father genetically experimented on him and his siblings when they were young, and they have quasi-DF abilities, like his sister with poison and his first older brother with electricity. Although he didn't manifest it when he was a child, it could be his latent power coming out when he was older.
