Honestly, I would just take her to a show, preferably a good indy show. That's how my gf got into and that's gotten a few of my friends into it as well. It's hard not to appreciate it when you see it live and up close. This for sure. My wife doesn't really care for wrestling or baseball on television, but if she is there in person to experience it, she really enjoys it. (She'll find a guy she likes; usually some guy with long hair and a nice look. Help me, she started liking Seth Rollins.)

Beyond the Mat and Wrestling with Shadows are two documentaries I can watch over and over again, and I've shown to non fans. Especially Beyond the Mat, it isn't just a great wrestling documentary, it's a great documentary period.
It's quite outdated with how the business is now, but I would never not recommend it.

With all due respect, how would a documentary help someone get into wrestling? In my eyes it's something you watch after already being interested in a certain wrestler, to find out more about them.
Someone's full DVD might be worth a try though. Like one of those combinations of matches and parts in between that explain the character or backstory.

It's biased as hell, but The Monday Night Wars is a pretty solid primer.
