Anything done by someone else that Dusty Springfield covered. Barb Jungr (look her up) doing any Dylan song. She is a cabaret singer, so she makes them her own. Baby Jane Dexter (ditto.) "Landslide" - The Fleetwood Mac, Dixie Chicks, and Smashing Pumpkins versions are all great.
"Boys of Summer" - Don Henley and The Ataris.
"Mrs. Robinson" - Simon & Garfunkel and The Lemonheads.
I am not sure anyone would prefer the original Leonard Cohen version of Hallelujah over the Jeff Buckley version, but Malcom Gladwell's Revisionist History podcast about it is amazing. It also discusses Deportee and Deportees Club by Elvis Costello.
