The Wire: Totally redo the newsroom storyline that bogged down the last season of maybe the best show of the 00's. Not sure how exactly I'd do it, but getting rid of the obvious self-insert character would be a good start.
Also a proper 13 episodes would be nice.

Pretty much everything we didn’t see in between full house and fuller house. But realistically DJ graduates, heads for college Jesse, Becky, and the twins move out Joey gets a residency in Vegas and moves as well.
Danny is left with an empty house (even with Michelle and Steph who leave for summer camp) doorbell rings in comes Vicky.

Brittas Empire should have ended with the last Fegen/Norriss episode in retrospect. Not that I hated all the later episodes, but that was a good ending. They dragged it out such that they ended up recycling the "it was all a dream" finish that no one but Newhart should ever do, as that will never be topped.
Coupling should have ended on the Series 3 cliffhanger of Susan being pregnant. Do a one-off special when the whole original cast is available, centered around the birth and what the characters are doing now.

No we need to find out who the camera crew is! Beat me to it! 2 legit 2 quit! Don't we already know? From the first season, it's a kid who used to live with them doing a college project but it was retconned out at season 2 and the shows producers say it's just the cast breaking the 4th wall

Justice League Unlimited/Teen Titans Actually have the full force of both the League & the Legion go at it instead of killing off most of the Legion of Doom members from infighting & having the rest shoved aside by Darkseid. A Direct-to-DVD conclusion to the DCAU based on The Technis Imperative sets the record straight with the Teen Titans continuity: TT is a prequel to BTAS (Dick Grayson being younger on that show than in BTAS being kind of a give away) & Tim Drake is leading a separate generation 2 Titans line-up consisting of Impulse & Wonder Girl among others.
Digimon Adventure 02 Tai & Sora hook up, TK & Kari hook up, Myotismon isn't killed by everyone's hopes & dreams, the dark ocean & Deamon get actual resolutions, the entire human population doesn't all get digimon partners of their own, & Matt isn't a F***ing astronaut.
Power Rangers in Space Lord Zedd takes over the Alliance of Evil & re-asserts himself as the ultimate evil. Dude's a got zord that can blow up planets (or "something the size of one") why would he even be scared of Dark Specter to begin with? More past rangers/actors appear, fighting along side the space rangers.
Power Rangers Super Mega Force Oh sweet merciful Jesus where to even begin? OK, instead of the army of past rangers coming together just for the sake of dealing with leftover remnants, the Legendary Battle happens while the entire Armada fleet is still there (IE like in the sentai version), the Armada ground forces include all of the unused sentai Monsters from both Mega Force seasons so the greater number of rangers actually means something.
Pokemon Ash defeats Gary, becomes league champion. The Team Rocket organization is destroyed in a final battle. Ash continued to seek out more pokemon to capture throughout his teen years before eventually settling down with Misty at age 20 & taking a job as an Elite 4 member alongside Gary. A time skip epilogue introduces an anime version of Green/Leaf as Ash & Misty's daughter who begins her own journey, Pikachu going with her as a good luck charm.
The anime however continues with Advanced Generation, now starring Brandon instead of Ash. & then Lucas in DP, Hilbert/Hilda in Best Wishes, Calem in XYZ, & whatever even is the name of the SuMo kids. Jesse/James/Meowth remain on the show this entire time, becoming members of each region's villain faction.

Pokemon -- Ash wins Kanto, wins Johto, becomes a Pokemon Master and prodigy. The show ends with him on top of the world, having defeated Gary and his enemies, including eradicating Team Rocket. But a Happy Ending is only temporary.
Years down the road, everything has changed. Team Rocket is supposedly dead, and a new trainer emerges to follow. Ash has vanished, however, and throughout the Anime his story is told by characters who use to know him. This new trainer is just as good and dominates the circuit, and even gets comparisons to Ash. The protagonist along the way learns his story. Ash and Misty began a relationship and was married briefly, but pressure and fame from being a Pokemon Master caused Ash to have a mental breakdown and leave the world. He has had no contact with anyone in years.
While this is transpiring, Team Rocket is revived and instills a hostile takeover. The new protagonist struggles in this battle, until he/she is saved by an unknown assailant, whose Pikachu rescues him. This trainer vanishes into the night, but the new protagonist tracks him down, revealing Ash. The two team up, defeat Team Rocket and then have a battle, where the new trainer defeats Ash, who returns to the world.

Drop the stinger at the end of Community and replace it with this. Abed goes to get on his plane, only to find its Troy’s private plane to take him to Hollywood. We get a few final minutes of classic Troy and Abed hi-jinx before we hear 🎶 Troy and Abed on an airplane! 🎶

A number of people mentioned Dexter. I don't know where to find it but some time ago I posted a synopsis for a spin-off series that picks up literally the second the last one ended. The gist of the storyline is that he gets caught, not for being a killer but for helping his GF escape. To throw them off her trail he gives them something bigger: the actual Bay Harbor Butcher. The series then winds up being one half Silence of the Lambs and one half Criminal Minds where Quinn is recruited by the FBI because he actually can handle a durable relationship with the FBI's latest consultant on finding criminals. Maybe someone else can find my full write up because I did not do it justice right here.
Anyways, if you think the TV series went off the rails, try reading the books. The first two books were actually damned good (La Guertta is sooooo much easier to despise and Doakes is actually a more interesting character) but it literally went supernatural in the beginning of the third book. Instead of being just wrong in the head, Dexter is possessed by a serial killing, body jumping ancient spirit. I don't even know how that book finished because I just had to set it down in order to keep my brain from locking up.

Very minor, but the ending to Homicide. The dialogue is exactly that from a scene in the first episode. The difference I would make is have it two of the original cast members in the scene, not just one and a last season godawful new character.
As a lover of this show, the studio forced changes were unforgivable, and the later one dimensional characters were unwanted interlopers into the series. The show should not have ended with one of them.

Supernatural ends after Season 5. Bobby shoves the brothers into Lucifers prison and breathes a sigh of relief that the world is free of those two juvenile f***wits that call themselves brothers. The fact that Michael and Lucifer die is also pretty nice.
