Simplest? Quesadillas are basically a grilled cheese with a tortilla. If I'm feeling lazy, I open a can of shredded chicken, and fry one up. Mix a little hot sauce with sour cream for dipping, and boom, a tasty and easy meal/snack that takes 10 minutes to make.

Speghetti Carbonera.
Cut 2-4 slices of bacon into 1 into strips Press 1-4 cloves of garlic Fry the bacon, as bacon is nearing completion add garlic. Finish and remove from pan leaving bacon grease. Remove from heat.
In a seperate pan cook as many servings of pasta as you are making. When pasta is 90% cooked drain it, reserving about 1/4 cup of the water.
Return bacon pan to heat. Add pasta in a circle leaving a hole in the center. Crack in egg in the middle and turn off the heat. Quickly stir the egg and add shredded parmesan cheese (not canned) as you stir. If the mixture is to thick ad a little pasta water. Add cheese until the sauce seems creamy. Season with salt and pepper.

When I want something quickly I take bread, top it with ketchup (no butter), then som fried eggs, then cheese. Heat it in a pan with a lid.

I like a simple turkey 'n' rice dish.
I get strips of turkey, rub them in olive oil then some turkey seasoning, pan cook at a high temperature (since they're not thick meat), and then I make up some long grain rice with mixed herbs and a bit of butter.
Whole thing takes about 14 mins. Also works great with chicken breast, which I tend to cut in half each since they're thicker.

Goulash is my favorite. I can't even come close to replicating my grandmother's goulash, but I'll keep trying.

As you're browning the hamburger, season with brown sugar, salt, pepper, onion powder, and garlic powder. In a separate pan, cook your noodles until they are soft. Then combine them with the hamburger, tomatoes and tomato sauce. Let it simmer for 15-20 minutes and stir it occasionally.

Stuffed Waffle Pancakes. Buy a tube of biscuits, separate them, thin each one out and put something inside (cheese, chopped cold cuts, scrambled eggs, etc.), then fold them over and press to seal them. Throw them on a waffle maker and cook until biscuits are nice and brown.

Marinated chicken breasts cooked in the George Foreman grill, teamed with high fiber pasta with fresh garlic simmered in olive oil. I add spinach or peas mixed into the pasta, topped by Parmesano or Romano cheese and freshly ground black pepper.

A pretty easy thing if you have a slow cooker/crock pot is bottle of barbecue sauce and a thing of Ribs for like 8 hours.
It also depends on how simple you want?
Do you consider cutting a bunch of veggies too difficult?
Cause I know a relatively easy Chicken Pot Pie recipe.
Cut chicken into cubes and brown them in a skillet. (seasoning it how you want...)
add whatever veggies you want (Carrots, peas, green beans, whatever) mix them around for like 8 minutes
add about 8 ounces of milk and a can of cream of chicken soup.
mix all that together...
put a premade pie dough into a tin, scoop the chicken mixture into pie tin, take a second premade pie dough lay it on top and crimp the two together...
cook for 35 minutes at 400 f...

If you don't mind it taking a little while, polish sausage casserole is good. You cut up some kind of smoked sausage, like polish sausage, potatoes, onion, and bell pepper if you want. Toss everything with a little cooking oil and whatever seasoning you want( I usually use garlic powedr, parprika and salt and pepper) Put in a backing dish and baked covered with foil for about an hour at 400 or till the potaoes are soft and then take some heavy whipping cream and pour over, backing for about 10 to 15 minutes more. It is pretty tasty.
