Lasagna...I make it in the crock pot and it comes out amazing without slaving over a hot oven.

Chicken adobo it goddamn delicious. If not for the ungoldly amounts of sodium in it I'd eat it every day. I make it once a month though. I genuinely can't think of any particular meal that sticks out as a clear favourite. I can cook pretty much anything and love most cuisines from around the world. Just something I forgot about adobo and am reminded of when you mentioned it again. It can also make for a nice BBQ. Like, a thing I learned from my mom, cook chicken and pork as adobo, but basically stop halfway once the meat has stewed a bit. Then, BBQ the pork and chicken, brushing the remaining liquid as the meat gets BBQed. Tasty. For dipping, it's soy sauce, chili, garlic, and onions, though personally I don't really use the dipping sauce. Just the meat and lots of rice. In this case, pork adobo tastes better to me than chicken adobo.

Steak. I’ve grown to love beef tenderloin filets, especially the ones my local grocery store sells. I can get one ribeye for twelve bucks or two-to-three filets for the same price. Season them with a good amount of kosher salt and let it sit at room temperature for 45 minutes. Preheat your oven to 425 degrees and start to warm two tablespoons of olive oil in a CAST IRON SKILLET. Nothing else. Medium/high heat. Throw the filets on, let me sit for four minutes. Season with cracked black pepper. Toss in the stove for seven minutes. Take em out, let em sit for a bit. Down the hatch. I’m a carnivore so I like rare meat. I can now vouch for this method of preparation. After a slight misstep last night, I bought some tenderloins from Costco, followed these directions precisely, and had a couple amazing steaks. My misstep last night wasn't with the process, either. I bought...something, and tried to cook it that way, didnt turn out that well. I was at Safeway looking through the meats, and I got all starry eyed at "grass fed" and bought it. Looking back, I dont know what it was.
