I was listening to the unreleased demo version of Led Zeppelin's All My Love earlier and it as an excellent use of guitar not heard in the finished version.
Another song was the acoustic version of While My Guitar Gently Weeps by The Beatles (though I love the bass guitar of the released version), this version seems sadder.
Obviously a lot songs might have eventually appeared on anniversary albums or rarities albums eventually

Demos from Uno/Dos/Tre, that make for a more satisfying listen than the three full albums.

They remixed it, but I really dig this original version of Michael Jackson's "Slave to the Rhythm".
The teen in me loves the recently rediscovered demos for Korn's "Life is Peachy" album. Alternate version of "Proud" too, which didn't even make the album to begin with. It sounds clearer than the album at times due to the mastering. Speaking of Korn, the early tape version of "Blind" has that cool solo that didn't make the cut.
Dredg has several demos that are awesome. "The Papal Insignia" and "Running Through Propellers" are my favs. The original "Uplifting" is way better than the album version, too. They were SO GOOD at one point; one of my favorite bands.
Porcupine Tree have a ton of non-album songs I love. One of their more known tracks, "Stars Die" wasn't even originally on an album; a massive mistake on their part, but it was the early 90s and they were still figuring out they were. So, less 'demos' from them and more non-album b-side kinda tracks.
I love both versions of it, but the original version of Mew's "Symmetry" is one of my favorite sad songs. This version is from "Half the World is Watching Me" (whoever uploaded it on YT used the wrong album art).

Prince's demos for songs made famous by others were generally brilliant as they tend to come from the period he could do no wrong when it comes to pop.

Written around the time of Crazy Nights, "Time Traveller" feels like it should be the end credits song to an awesome action movie. Never made it past demo stage, eventually got released on Kiss's box set.

Sadly the soundtrack/Released version doesn't have the piano solo that the movie has.
Although released as The Juvenile (Still good) they changed the lyrics

The 1992 film "Trespass" was originally titled "Looters." Ice-T and Ice Cube provided a song for the soundtrack. However, they recorded a song when the movie was still called "Looters."
This is the song that was actually released.

The initial slow, demo version of "While my Guitar Gently Weeps" is fantastic. I was glad that it was released on the "Love" soundtrack.
On a related note, Harrison's initial demo for "It Don't Come Easy" is pretty good too, though I don't know if it is better than Ringo's version.

Always preferred this version of this song when I heard it in "Meeting People Is Easy" under the working title "Big Ideas (Don't Get Any)" - the recorded version on "In Rainbows" was always lacking to me.

This song was left off Flyleaf's first album for some reason, and only appeared on an outtakes EP. They only even played it a few times live, and dropped it until they made an acoustic version on another EP, and started playing that instead
