I'd book him to win the belt and reign for just a few months (maybe 3 or 4), looking unstoppable in the process. Rather than someone beating him, however, he's stripped of the title and suspended for doing something unconscionable. Of course, the suspension doesn't stop him from intruding on the shows in his usual freakish ways.
They'd have to keep it within PG/advertiser guidelines and avoid it being cheesy like TNA RVD covered in ketchup, but basically play it like he damn near murders a guy and the company has no choice but to act. That way you get the proper payoff for the early title match, you keep his mystique and unstoppable aura going while giving him a reason to do his creepy video intrusions, and it avoids a Brock burnout situation where you have a monster who only appears on PPVs while forever holding the belt.
Granted, this idea is somewhat undercut by the fact that WWE rarely does anything about stuff like attempted vehicular homicide.

Monster heels exist for one reason and one reason only - to be fed to the Face of the Company(tm), to build a champion or one who's marked for a big title, or as the Final Boss to wear down a long-standing but over-the-hill champion as one last hurrah before making the transition from one to champion to another.
Bray Wyatt - in any guise - was never supposed to last as long as he has, at the level he has been placed and maintained. Back in the territory days, he'd have moved on within two years lest he kill the territory for everyone else.
While they have almost certainly jumped the gun on Bray by throwing him into the feud with Seth, there no way they would have been able to stretch out that tease until Wrestlemania - the Royal Rumble, maybe, but not Wrestlemania. So, as I've said elsewhere here, they've got two options if they don't want to kill the Fiend on the first shot. They can either let him beat Seth clean (which would be the utter death of the Universal championship, I think, because the Fiend is not supposed to have any need for it, nor would he necessarily elevate it by holding it), or the Fiend is thwarted in some way from beating Seth which, though a frustration, would do nothing to hurt the Fiend's drawing power so immediately.

The more I think about this character, the more I don't like it as a long-term thing.
It's a given that when someone finally beats him, it's going to be done by removing the Fiend mask from Bray. But everyone already knows what he looks like beneath it, so...

I think Funhouse Bray needs to start wrestling. The Fiend really should be getting saved for special occasions, it'd increase the shelf life of the gimmick dramatically. Granted even then, you run the risk of turning him into Finn Balor where he's unstoppable with the costume on but completely useless without it. You definitely need to avoid that as well. Taking it even further, have Funhouse Bray act like a total babyface. Imagine The OC beating down Rollins, then Bray runs down to fight them off. The mindf*** that would play on the babyfaces feuding with The Fiend would be awesome. Besides, if you're going to do a Jekyl/Hyde character, Jekyl has to be babyface.

Actually just realized how you have an out for Bray as champion - have him retain through and at Mania, then have whoever gets Money in the Bank attack and cash in on Funhouse Bray.

Absolutely Undertaker’s longevity has been based on equal parts strong booking and talent. He’s also been willing to evolve & change both his character and his wrestling. Bray has the ability and willingness to evolve. Has the talent and mind to play the character to its fullest potential, but needs the strong booking.

Monster heels always have a short shelf life. They have to lose eventually and then the mystique isn’t quite the same. He’s best as a special attraction so maybe the loss doesn’t hurt as much if we don’t see him for a while. Bray has proven to be incredible at re-inventing himself though so I’m sure he’ll come up with something. People say this, but it seems like a WWE problem. Other promotions have unstoppable wrestlers who lose but are still mostly unstoppable.

Which is why the next phase is another mask underneath it! or you know... after The Fiend loses, Bray removes his Fiend mask and outfit (he could have underwear on underneath.) and gives it to Harper, Rowan, and Braun and they put in a flaming trashcan. In exchange they give Bray Wyatt...
