Also probably no surprise in a game series that has featured Hulk Hogan and Roddy Piper as guest voices, but the Saints Row series has a ton of wrestling references. Rob Van Dam also voiced a character in The Third. Saints Row 2 had some wrestling references, too. For example, when changing taunts or compliments, one of them was Sting's taunt when he yells "Owwww!" There was also the Flair strut. In a cutscene, the character Veteran Child called Mr. Sunshine Papa Shango. Also, when changing fighting styles, one style had hurricanranas and head-scissor takedowns, and another one had spinebusters and backbreakers.

In (arcade) Ninja Gaiden, a pair of bosses are patterned after the Road Warriors (and even have an Iron Man soundalike as their BGM)
Zangief (Street Fighter) = Victor Zangiev (most US fans will remember him in the Russian team at Starrcade 90)
Indirect, but...Abobo (arcade version) looked like Animal to me as well in the original Double Dragon. The Bad Brothers in Golden Axe looked like the Iron Sheik.
If I wanted to really cheat, I'd name when wrestling games reference real life wrestling. Such as...
Alexander the Grater in Saturday Night Slam Masters = Big Van Vader
The Main Event had TONS of these.
Mat Mania had the Golden Hulk as its main boss.
Pro Wrestling (NES) : Fighter Hayabusa = Antonio Inoki. King Slender = Ric Flair. Giant Panther = Hulk Hogan.

Mortal Kombat 11 has a ton of them. Lot of them are in connection to Sonya but even beyond that Kano has the Lumbar Check while Jax has the Burning Hammer, I think someone had a piece of gear called Empress of Tomorrow (think it was one of Kitana's masks?), Kano has a piece of gear called Ruby's Riot Shield, and there are others I'm blanking on. Johnny has a belt buckle thats called "Bullet Gang is Fine" and in one of Noob's pre-fight dialogues, he drops the line "Everything is Evil", so at least one person in that studio is an NJPW fan.

No More Heroes has probably the deepest cut of wrestling lore I've ever seen in a non-wrestling game hidden away in a flavor text box. You mostly unlock new moves by watching wrestling tapes from your tape trading buddy, which is already pretty relatable to hardcore wrestling fans, but then you also get letters from your master just before the boss fight that unlock one-time-special moves that only work on the next boss you're up to fight. One of those letters tells you to "remember your training in the dungeons of Calgary". I have no idea if that was a direct translation from the original Japanese or if it was changed by the localization team, either way that one blew me away when I read it. Given Suda51, the creative lead behind NMH, worked on Fire Pro before, it's not remotely out of the realm of possibility it was in the original Japanese, but I am not sure off-hand.

The Tiger Mask-esque wrestler enemies in River City Girls are named Dwayne, Leon, Aurelien, Szatkowski, Oscar and Hellwig. I assume they are references to the real names of The Rock, Vader, Jake Roberts, RVD, Rey Misterio jr and Ultimate Warrior respectively.
