Biggest thing for me is that the matches are almost always worth paying attention to; that's not just a compliment on the in-ring quality, but the fact that most of the matches do their best to feel like they're about something, so it matters what moves are being done, how they're being performed, etc. They have exhibition matches, sure, but they don't just happen as "wrestling for wrestling's sake", they're typically used to tell us something about the people in the match or to set something up for the future.
Like, I saw some people complaining recently that AEW's segments aren't as good anymore (likely results of the larger roster plus not being in the same place every week like they were during the pandemic) and that it made a lot of "pointless matches", and all I could think was that came across like a person not actually watching the matches, or at least not paying attention. Again, yes, there are exhibition matches, and most of the TV matches have winners you can probably predict ahead of time, but how you get there is the most important thing in wrestling, and AEW focuses on that quite well.

The matches are good but also vary widely from each other. So many promotions have good wrestling but they often blend together. AEW features such a wide diversity of styles that makes me feel like I get my fill of everything in the world of wrestling.

Anybody that's calling current AEW matches "pointless" clearly wasn't watching WWE circa Guest Host Era. Even with the guest hosts the Raws especially all seemed to blend together in a "Oh shit, Vince ripped up the script fifteen minutes before showtime, f*** it, send out Chavo and Hornswoggle again" sort of sense. At least with AEW you have a decent idea of who's interacting with who lately, and a lot of said "pointless" matches have been pairing off folks in aligned factions or people with history. 2009-2011 WWE, it felt like unless you were in a main event angle or you were a low card "makes Vince laugh" act, you pretty much had no idea week to week who was going to be wrestling who or if they were even going to be on the show.

AEW introduced me to a number of Joshi talent that were amazing.
Riho. Maki Itoh. Hikaru Shida. The Magical Girl YUKA SAKAZAKI. Emi Sakura.
Just to name a few.

AEW has given new life to many careers in Pro wrestling.
Serpentico was planning to retire. Now he's in a fairly popular tag team with a Deathmatch legend that people enjoy because of their silliness.
Eddie Kingston was about to sell his wrestling gear to help his mom. Now he's a bona-fide star.....again.
Tony Schiavone was not really in the wrestling business since 2003, besides the little run in MLW. Now he's back to being the Tony Schiavone of old that I loved.
STING. The man was an afterthought in wrestling after his retirement from WWE. Now he's the new New Jack, and a new generation of fans can now be little Stingers.
Billy Gunn was pretty much an afterthought. Now he's teaming and feuding with his sons, which has to be a dream come true for him. Also, he's part of one of the greatest phrases in 2022: "SCISSOR ME, DADDY ASS!!!"
Dustin Rhodes. I figured he was done after his release. But he got the match that he and Cody wanted, and this "Last Ride" has been a great 3 years for him.
So while not everything in AEW has been Grade-A beef, there's alot in there that I can still enjoy.

I knew about Shida from seeing pics of her in SHIMMER years ago, and downloaded a Fire Pro Returns save with Emi Sakura on it back in 2008, but I have been impressed with them and the others you named.

Even with all the shit going on right now, people are trying very hard to compare it to WCW, or some of TNA or ROH's past misadventures, or WWE, but really, it's kind of highlighting that, good or bad, AEW's a pretty unprecedented case.

The trios tournament. We can debate who should have won certain matches but overall, the match quality was great and it was tons of fun. AEW really does the best chaotic multi-man matches.
