While that looks cool, the fact that you turn it on as a finisher and don't do it naturally as a super reversal or the like makes it kinda lame.
Plus, I see from the look on Bobby Lashley's face while Randy was pinning him that we still have guys breathing like fish every second.

Wait... So R1/RB + left/right an instant UC? What do Up and Down do then? Go into a regular strong grapple like last year, from which you can do four moves (Up, Down, Left or Right on the stick) an irish whip (The B button) or a go-behind (Click the right stick, no more doing UC moves that way)

Go into a regular strong grapple like last year, from which you can do four moves (Up, Down, Left or Right on the stick) an irish whip (The B button) or a go-behind (Click the right stick, no more doing UC moves that way) I do at least like the fact they put the go-behind as a one-touch action, not sure if they did that in previous games.

No no its still RB plus the stick for strong grapples. Ok. So there's still the categories, but now all the moves in said category are UC? I seriously hope that's the demo smurfing with people.

Yeah, basically if its confusing anyone....
The right stick by itself still does "quick grapples", small moves like a grappled punch, knee strike, or snap more, done by moving it in any of the 4 directions.
Holding RB when you move the stick turns it into a strong grapple. Now, I only played as Taker and Orton, and only really tried a variety of moves as Taker, but, here's how Taker worked.
RB + Left: Instant Ultimate Control Chokeslam RB + Up: You can then choose from 4 moves. Up from this position does Old School. RB + Right: Ultimate Control Powerslam RB + Down: More grapples. Not a submission grapple catagory anymore, as I did a backbreaker out of it.

I'm inclined to think the demo is something of a "dumbed down" experience. Eliminating so many grapple moves is largely unnecessary, and I do believe a game company wouldn't do that without a spectacular reason.
I never knew there was a single button to go-behind.

Ah. I can totally see THScrew doing something like that Yeah, if this is how the game is going to be grapple-wise, then it was a good idea with crappy execution because they didn't bother to change the actual system. But I'll have to withold final judgement until the released product and being able to see Create-A-Moveset.
