Hard to pick. Eric Clapton's Unplugged is one of my fave albums-so many great songs, though my fave from that was a song that Paul McCartney also covered acoustically-San Fransisco Bay Blues

I got a million of 'em. I love acoustic guitar version of songs and acoustic instrumental songs. As far as acoustic guitar instrumental songs go, I'd say "Drifting" by Andy McKee or "Under The Apple Tree" from Final Fantasy VII Crisis Core. I'll have to get back to you on the acoustic guitar version of songs, though.

In terms of sheer beauty: "Tears in Heaven", "Layla", "Everlong" by Foo Fighters, and "Good Riddance" by Green Day.

EDIT: And I know it's not really an acoustic song, but I LOVE the version of "Over The Rainbow" by Isreal Somethingorother. It's ukelele, but so beautiful.

The following songs are my favorites from what I believe to be the best studio acoustic album ever recorded, Nebraska:
As has already been stated, Eric Clapton's Unplugged album is incredible from start to finish.
Not sure how many on here would like it, but Jay-Z's Unplugged album with the Roots is phenomenal.
Finally, one of my favorite songs from one of the great guitarists ever, Stevie Ray Vaughan:
