He already did one with Dave for HighSpots. I'd love to see a Hulk Hogan shoot interview along with a Paul Heyman shoot, and another Mick Foley shoot.

I won't quote everything because it will take forever, but here are some comments after reading replies to this thread so far:
Shane McMahon sitting down to do a shoot would be amazing. I think the only other people I'd be more interested in hearing from would be Vince, Jim Ross, Triple H and Stephanie. I doubt we'll ever hear from any of them....
Randy Savage if he was calm and wanted to talk about his entire career from start to finish. The video I saw of him bashing Triple H and talking about what he could do to his wife, etc. made me feel bad for him. I would want a shoot where he told it like it was, but if he had a hidden agenda and couldn't keep focused, it wouldn't be all that great. On a related note, if you've never seen the Lanny Poffo shoot, pick it up - it's really good.
The Shawn Michaels shoot RF Video put out wasn't very good. It was hard to hear (could be the wad of tabacco he had in his mouth?) and the camera was shaky. For a guy like HBK, I expected more but he could definately do a part 2 with better video/audio.
I wouldn't be surprised to see RF Video to a shoot with Snitsky as I noticed they've got him doing an autograph session at their table at an upcoming indy show this month ($15/picture). Maybe they'll film a shoot interview with him before or after the event?
I think a Johnny Ace shoot would be cool, but I fear he'd either hold back or he'd lie every 2 seconds (a lot like his brother Animal did in a recent shoot by himself)
Jim Ross -- I'd like to see Wade Keller do a 3-Disc 'Ultimate Insiders' with JR much like he did with Russo/Ferrera and the Hardy Boyz. The big difference between Keller doing a shoot and RF Video doing a shoot interview is that Keller seems better at follow-up questions based on an answer and trying to ask questions in a way that will make the wrestlers answer or get more into the subject whereas RF Video seems to read off a list of questions and they rarely move away from their list. It's a shame. But yes, if JR or someone from 'the office' (Bruce Prichard, we're waiting!!) decided to do one, I'd hope the person doing the interview covered everyhing.
Earl Hebner did one with Dave Hebner shortly after they got released from WWE. It wasn't as good as I hoped it would have been. Earl seemed depressed (can you blame him?) and Dave did more of the talking, which surprised me.
Regal did one around 1999. I don't think I ever saw it, but it's out there. I'd like to see a more updated one when he decides to retire from in-ring competition with WWE.
Last point -- I know sometimes these interviews become available when a guy is released from the company or they're not bound to a contract, but in most (all?) cases, I really wish they'd wait to do these shoots when the persons career is over. What is the point of a Cryme Tyme shoot or a Chris Masters shoot when they've only worked a little over a year or two? I prefer shoots with guys who have retired and can sit down and discuss their career from start to finish.

A few people I'd like to see/hear shoot:
A-Train, Scotty 2 Hotty, Alundra Blaze/Madusa, Val Venis, Bruce Prichard, Brooklyn Brawler, Carl Demarco, Scott D'Amore, Damien Demento, & the entire cast of Tough Enough 1 in one shoot interview (either all of them together or seperate shoots mixed into 1 DVD)
Wrestlers I would've liked to have seen shoot (RIP): Davey Boy Smith & Owen Hart, Big Bossman, Rick Rude, Curt Hennig, Chris Benoit, JYD and Stu Hart

The one with Billy Jack Hayes is enough to depress anyone, but is so fascinating that you cannot stop watching.

I watched the Steve Blackman shoot, and I fully endorse it.
You'd think someone like Steve Blackman who wasn't really involved in lots of huge angles and in general wasn't in WWE for long wouldn't have too much to say, but it's a GREAT shoot.
Watched the whole thing all in one go and could have listened for another 3 hours.

Undertaker!!!!!
I'd also love one from Vince and JR, and I'd love to see Raven and Honky Tonk Man back together as that was the most entertaining one I've seen from RF.
