Okay, some claim it was the Principal and Pauper episode, but I think they still churned out a few classics after that (behind the laughter, for one.)
I think the possibilities are
Any of the "vacation" episodes where they go to Japan or Brazil. The Brazil one was really, really bad.
Marge's sister becoming a lesbian. Okay, not only was it going against what they had written (Patty had numerous romances with men) there was no real clues despite it supposedly being very obvious. It was clearly only something they came up with for that episode. Um..why didn't they use someone like Smithers? Since at least they've hinted he was gay forever and it made sense.
Or That 90s episode. Yeah, this just threw out everything that was cannon.

I'm not sure it really "Jumped the Shark", it just got progressively worse after about season 9-ish

Patty only had one romance with a man, Skinner, back in season 1. Marge indicated in the past that Patty had chosen celibacy
Patty appeared in the Springfield Gay Pride Parade on the "In the Closest" along with what really looked like Smithers.
Patty was shown leaving the Maison Derriere when the city was planning on tearing it down.
In flashback episodes after Patty came out, it was shown she may like Krabappel and she stole some guy's wife away another time.

Never really jumped the shark per se, but it took a major dip in quality starting with season 11.

I said around the end of Season 11 when Saddlesore Galactica aired. I may be the only one who likes that episode. Sure, it made no sense but it had a number of good jokes. To this day when I go to a concert I randomly scream at the band to play Taking Care of Business. And I agree with the guy above me. The quality has dipped, but they seem to put on a number of good shows each season.

Since jumping the shark is supposed to be tied to a specific moment where something went bad.... I'm not sure Simpsons jumped the shark. It just degraded over time.

Simpsons is kind of like a dull diamond these days if anything.
It's still good, just not as shinny as it used to be, 20 years will do that to any show I guess.

I agree with the Japan episode, sadly it doesn't seem as bad now due to the even worse episodes since.
Still it seems to be getting back towards the general area of the track.
