Have to go with Taker/HBK. Hell in a Cell as a gimmick could have really fallen flat as simply just a glorfied cage match with a roof (which in a way it is) but these two and the peformance they showed that it was something to see. Foley in his book admits that because of HBK's peformance he was going to have to go far to try and match it.
I would give the King of the Ring 98 a better rating but as it was simply Foley taking the (incedible and dangerous) bumps it felt rather 1-sided.

I went with Mankind vs. Undertaker. In terms of match quality, it's below the 1st one, but damn it was the most memorable HIAC match ever. The sheer brutality of it was off the charts. That match cemented Foley forever.

Taker/HBK still holds up a lot better than Taker/Mankind, as the latters shock value has worn off slightly by now. Taker/HBK was more psychology based and an overall great match.
I also loved Taker/Brock.

I would say the best one was HBK/Taker.
As for the Mankind/Taker one, I think that HIAC should have been discontinued after that one. There is no way to top those bumps without killing someone or looking weak(i.e. the HHH/Foley match where he collapsed the ring), and why even give people the chance to try? Not to mention that it makes every future HIAC match unable to live up to the hype when they inevitably show his bumps in hyping the brutality of the next one.
What was Foley's master plan for getting off the cage after he climbed back up after getting thrown off?

I would have to go with HHH/Cactus Jack as my personal favourite I remember even tho I loved HHH as a heel I really wanted to see Cactus take the WWF title that night.
Also Memorable for JR begging Cactus to kick out and the image of Stephanie having a twisted smile after Cactus went through the cage

HBK/Taker is the best, followed by Taker/Edge.
Taker/Mankind is overrated, as it was really those two major spots, and a very short match in between.
