We all know the difficult games, Contra, Ghouls n Ghosts, Ninja Gaiden etc...
But what are the easiest and what qualifies it being supremely easy?
Is it a matter of unlimited lives or is it more the ability to just breeze through the game?
Are some Genres excluded?

I don't think I'd ever class any Mega Man game as easy. First time you play a mega man game you die a lot.
Memorising all those vanishing platforms is not easy. Picking the right gun and order for the right bosses is also tricky and needs several playthroughs.

Then again, I guess I classify them as easy, because I'm so used to them.

The Lego series is pretty easy. I play Lego Batman when I just want something fun and not too challenging.

Super Mario World is one of the easiest games out there, and I'm baffled when anyone says otherwise. I can sit down and 96 star the thing in around four-five hours... it just depends how many times I die with blue Yoshi on that second special level. Every boss is pretty much a cakewalk.

The Lego games are pretty easy. Great games, but not really changelling at all.

What about Big Rigs? Sure, it's terrible, but anyone can win at that

Yeah, Big Rig.
Season mode of SvR06 is pretty easy for the most part. GM mode is a pain in the ass, though, since it takes forever for me to get my ratings up.

On the medium difficulty I can pretty much rip any career mode in the early Smackdown games to shreds, especially SYM where there's just one counter button, and you just need to mash that and any given direction whenever you're not on the offensive and just wail away right back. It's just like Kingdom Hearts 2's triangle button cues, you don't get punished for hitting it at the wrong time, just as long as you hit it at the right time it's all good.
Yoshi's Story is that combination of being very easy and very short. Good choice at the virtual console price as it is a solid game (though it has such a kiddy atmosphere you'd have to hook yourself to an oxygen tank each time ya play it), but I still cannot wrap my head around anyone spending more than $20 for it (let alone $60 when it first came out).
Until you get to World 8, Super Mario Bros. really isn't that difficult at all. World's pretty easy too (though maybe not to 100%). And I blazed through both of the New SMB games (though 100% those is a whole nother story).

Old school Sonic games. I don't think I've ever played one where I was just stuck on. I can play through 2 without dying once and very few times on the others.
Resident Evil series is another one. Especially the original games. I can't seem to remember dying much at all on parts 1 - 3. Code Veronica X for that matter as well.

Tekken 3 is too easy on any given difficulty.
The arcade version of Tekken 2 that is included in T5 is actually challenging, especially Kazuya on Ultra Hard.

Kirby's dreamland, I completed the game the first time I played it as I expect most people did, although to be fair it's meant to be easy.

Yeah, in some areas it's girly and such...but I have NEVER died playing this game. Ever. My other choice would be the Animal Crossing games but I don't know if they count and I've never played any of them.

24 and Sopranos on PS2:)
I'm not an avid game player, but bought these two because I liked the show. If I can beat the game in 1 or 2 sittings... I'm sure a 5 year old can.

My other choice would be the Animal Crossing games but I don't know if they count and I've never played any of them. You can't really judge Animal Crossing by conventional methods, however collecting everything would be near impossible so I don't think it should count.
