Started reading the Lies of Locke Lamora by Scott Lynch the other day, which I bought in a second-hand book bin in a bookstore. I've read about a third of the book already, and it's been really good, in my opinion.

You mentioned two of my favorites (Jordan and Martin), but I'd also suggest checking out David Gemmell, Terry Brooks, and L.E. Modesitt, Jr.

Tad Williams' "Memory, Sorrow and Thorn" trilogy was great. the last one's like 1000+ pages, though.

The early Dragonlance books by Margaret Weisman and Tracy Hickman. These pretty much set the bar for what I look for in fantasy books.
Also Terry Pratchett is god, as is Gaiman.

R. Scott Bakker,especially if you like books where the characters are not perfect people.I mean Anasûrimbor Kellhus is not really someone you want to hang out with even though technically he would be considered one of the good guys.Well good in the fact that he is not trying to summon Mog-Pharau, the No-God.The book is also a little heavy on Philosophical stuff.
