Supermarket Sweep wouldn't be bad.
I would love to see what they'd do with a modern-day Legends of the Hidden Temple. It amazed me as a kid they had a game show just for kids that was so complex and intricate...though they would need to toughen up the questions about the story. Even being approx. 4 or 5 years younger than the contestants on the show I could answer damn near every question rung off.
But if I had to pick just one...

what was the one where they played arcade games? it was on Nick, I think. That was called Nick Arcade and they played mainly Super Nintendo and Sega Genesis games as well as SNK Neo-Geo games(which were released as arcade games, if I remember correctly). Might also be thinking of Starcade, an early '80s show which aired in reruns on G4(before the G4/TechTV merger). Edit: Somebody mentioned Rock 'n' Roll Jeopardy! and I'm surprised that ESPN hasn't worked out a deal where they did Sports Jeopardy!.

I enjoyed the orginal version of the Match Game but I think there is a pretty obvious reason as to why the attempted revivals of the show fell short. I think it had a lot to do with Gene Rayburn and the celebrities they had on the show. They had great chemistry and they played off each other very well. That is a big reason why the orginal Match Game was so good. The attempts to revive it failed because they hosts and the celebrities didn't have that same chemistry.

Nick Arcade was the first to come to my mind, although I endorse the suggestion of Legends of the Hidden Temple as well.

I'd love to see Video and Arcade top 10 return, but sadly time, and the gaming industry has passd it by.

Supermarket Sweep for the adults. Nickelodeon GUTS for the kids.
I wonder if there are any pieces of the 'Crag on eBay...

Concentration (DAMN YOU VIACOM!) Debt High Rollers Joker's Wild Masquerade Party Three on a Match Tic Tac Dough Yahtzee (I think it could be a good game under the right people. Combine the Dice game with the "Hands Down" card game.) You Don't Say
