My favorite Japanese wrestler was Milano Collection AT, but I actually think its better to see him live than to watch him on video. And he's retired, so...*shrug*

I thought Milano Collection AT was Italian.
As for good wrestlers, the original Tiger Mask was amazing. He was having what we now consider X-Division style matches in 1982.
Also, a good way to familiarize yourself with Japanese wrestling is to get Highspots' Wrestling's Greatest Matches dvds. They are amazing quality regardless of what year they're from, and feature matches from Japan that were rated by Meltzer as at least 4 1/2 stars.

Kota Ibushi! He's one of my favorites from any country. He mostly wrestles for the promotion DDT(Dramatic Dream Team).
