Everything you have mentioned is available in World of Warcraft Heh, paying every month for the high privilege of playing a game I already bought and being called a thief if I don't just doesn't do it for me. There's always Guild Wars. It's dark and gritty, has a medieval-like atmosphere, it's looks as good if not just as good as WoW, and it's free to play. You just have to buy the game and that's it.

Wow, I just saw a screenshot of Oblivion of the player fighting two skeletons outside a creepy tower, while it was raining. That actually looks fairly close to what I have in mind (though to really fit the bill, they should still have some flesh on those bones ;D) so I'm definitely giving this one a try.
Anyway, thanks for the heads up, people! Oblivion and Dragon Age look great. I might try Guild Wars too someday, but the thing is, it looks like the kind of games I get really involved into for like two weels, and then I promptly forget about them.

I prefer Oblivion's predecessor, Morrowind.
And while it isn't very sandboxy, Dragon Age Origins is very much dark, gritty fantasy. With persistent gore turned on (I play with it turned off as it's still plenty bloody just without your characters looking like they walked through a slaughterhouse after killing a rat), almost childishly so.

It's pretty close to what I have in mind, actually, but I'd prefer something more fantastic. You know, with zombies, magicians, goblins and stuff. Also, Assassin's Creed has more of a renaissance feel. I'm really looking for a middle-ages setting. With huge-ass castles, knights armor and/or chainmail and all that stuff. The Elder Scroll series also seems good, but if it's as close to Fallout 3 as people say, it's not quite what I'm looking for. Come to think of it, what I'm talking about would be somewhere between Elder Scrolls and Assassin's Creed. With a touch of Mortal Kombat-style grittiness. Uh....dude? You are mixing Assassin's Creed up with Assassin's Creed II and Brotherhood. II and Brotherhood take place during the Italian Renaissance. Assassin's Creed take place during the Third Crusade, more specifically in 1191. You have to fight knights in chainmail and scale castle-like forts, etc, etc. Here's Assassin's Creed:
