Tom Cruise played a cowboy in a group scene in Young Guns, and Jon Bon Jovi played one in part 2.
I remember the controversey over it, but I'm not sure if they actually made it out of editing but N*SYNC appear in one of the group Jedi scenes in I think it was Episode II.

Tom Cruise played a cowboy in a group scene in Young Guns, and Jon Bon Jovi played one in part 2. Emilo Estevez wound up being an extra one day too. During one of the fight scenes, he "shoots" himself. The actual extra was sick or something, so Emilo just did it himself.

"According to an interview with Mark S. Driscoll of Look! Effects, one of the fight scenes uses backgrounds from an earlier fight which Sylvester Stallone actually attended prior to filming. He said it should be possible to see Stallone (as himself) in the audience while Stallone (as Rocky) is in the ring."

Mindf***! Anthony Daniels in Star Wars: Episode II. He plays a fancy pants guy in the first sequence, the bar scene part. Wasn't he standing next to Ahmed Best, a.k.a. Jar Jar Binks, in that same scene?

Sylvester Stallone walking in the crowd in Saturday Night Fever Never knew about this Actually, it was in the sequel, Stayin' Alive, and Travolta bumps into him and they give each other a tough guy "Watch it, buddy!" glare. I think this would be considered a cameo, but it's so quick and without dialogue, and so little emphasis is put on it, that it might squeak in as an "Extra". Nicholas Cage is essentially an extra in Fast Times, but that was because his scenes were essentially chopped, and he wasn't famous yet, still being billed as "Nicolas Coppola". He didn't even get a name, he was just "Brad's Bud".

I love how at the bottom of the page it has a link to a Tom Hanks bio but has a picture of Nelson next to it Also, Randy Travis (the singer) was in the original Young Guns as well but all you see is his hand turn the Gatling gun I believe (they said it in the commentary of the Young Guns DVD)

Samuel L. Jackson's part in Kill Bill would probably count, even if his character does have a name. I don't recall it showing his face, and I don't believe he gets any dialogue.

No, he does, lines and everything. The Stallone thing makes sense, since he directed Staying Alive. Pretty cool. On that wavelength, Hunter S. Thompson (Johnny Depp) running into himself (the real HST) and acknowledging himself in Fear And Loathing In Las Vegas stands out as a favorite.

Didnt Jesse Ventura have what essentially ended up being an extra role in demolition man? Also, Alice Cooper in Maverick (you only see the back of his head in a barroom scene though).

They are classified as extras because once somebody says more than 2 lines in a movie they are eligible to sign up for SAG.(screen actors guild) This can be changed if the person is actually listed as a main star (ex: Teller from Penn and Teller) But for the most part is based on the number of lines the person has. It's all about money

Has it been confirmed that the guy in the jazz bar in Spider-man 3 was actually Willem Defoe? I've heard both that since he was on the set anyway he'd make a cameo and, on the other hand, I've also heard people say it's just a guy who happens to look exactly like him.

How about George Romero in " The Silence Of The Lambs"? If I remember correctly, he plays a Federal Agent when Lecter is transferred to Memphis and has only one line. On that note, the aliens from "E.T." in the Galaxy Senate scenes in "Episode I". Would that count?
