I could be making this up, but I have a vague memory of Flair beating one of the Spirit Squad with a chop. might have been Mitch, that was like the only match I remember him even having

Yup, he beat Del Rio clean the Raw before Hell in a Cell with a Kick. Also how he pinned Bryan on SmackDown before that was reversed, and how he beat Mysterio at Capitol Punishment. The way they've built his kicks, they may as well be finishers. They're sold like shotgun blasts.

I think Bret Hart used to win more of his main event matches with rollups and small packages than he did the Sharpshooter.

And the top-rope Olympic Slam by Scott Steiner beat someone. Not sure if it was a midcarder or jobber.

Last year, before Wrestlemania, Christian beat Brodus Clay with a tornado DDT.
Then, on the Smackdown immediately before Edge had to retire, Alberto Del Rio beat Christian in a number one contender's match with an enzuigiri.

Not sure if he used it as a finisher or not but Batista beat Eddie with a spinebuster at No Mercy '05 He used it as a finisher on and off. Offhand can recall he beat Khali with it in 2007.

Robert Roode beat someone on Impact recently with a spear I seem to recall, because I wondered if they were going to make it his long-term finisher but he hasn't used it since to my knowledge so yeah that.

I'm a very big fan of people winning matches with non finishers. I remember the original ECW being very well known for that when I was watching. The DDT also seemed like the universal finishing move in ECW at the time. It won a lot of matches. Maybe that's why Jake Roberts appeared at N2R '98. So many people using the DDT Heyman felt he owed the guy a payday (that is, if the check cashed).

Yeah I hated that finish, very underwhelming. I get they were trying to further their storyline but would it have hurt that much for Morrison to then quickly hit his finisher then pin him?
