So, we have a lot of threads around here about video games. And typically we end up talking about difficult parts, or difficult fights.
This is not that thread.
I'm playing through Metal Gear Solid 1 for the first time right now, and I'm typing this as I just beat Vulcan Raven. (On foot, not in the tank.)
And after fighting Sniper Wolf twice and the Hind D.....MAN did I need an easy boss fight like that. He was a friggin' chump. Hell, I found that fight relaxing. After two fights with this game's broken sniper mechanics and that annoying helicopter fight, I needed a cakewalk boss like that.
So, keep this going now. Post some boss fights that didn't put you through hell, whether it left you happy it was so easy or it left you thinking "...wait, it's already over?"

Final Bowser fight in Super Mario Galaxy. After everything the game threw at me I was thinking..."that was it?"

Mega Man robot master once you know how to beat them.
Liquid Ocelot at the end of MSG4. The fight is really really cool, but quite easy.

The final boss of Bioshock. If you have even been halfway competent in upgrading your abilities throughout the game, you can blow the sucker away in about 30 seconds.

The beholder boss in Baldur's Gate: Dark Alliance is easy to beat if you keep trying to swing at him from the side or back.
Any boss you can kill in one hit with a phoenix down.

Not to mention Seymour Omnis if you've maxed out your party enough. Or at least it's a lot easier when compared to Seymour Flux's cheapness.

Ghoma from The Legend of Zelda. One arrow is all you need.

I remember Shang Tsung being ridiculously easy, especially compared to how much of a cheap bastard Goro was in the first Mortal Kombat.

Andre the Giant in No Mercy probably counts, and because of the "super heavyweight, slam them once and the match is basically over" mechanic, it's a very easy fight if you go that route.
Arc Rise Fantasia has its share of problems, but if you want challenging boss fights in an RPG, look no further.

Dead on about Goro. He no-sold like Buddy Rogers.
My pick is Wart from SMB2. Bubbles? Seriously?

Joker from "Batman: Arkham Asylum".
For a final boss, he was too damn easy. Especially in comparison with Titan Ivy.

True Ogre in Tekken 3 was pretty easy to beat. I think I only ever lost to him once

The Leader in the Hulk videogame on SNES/Genesis. To be fair though, from what I've seen in the cartoon back in the day, The Leader wasn't much a fighting type...so playing The Hulk against him is a major mis-match.

Oh, and another easy boss fight:
Gamma from Mega Man 3.
Top Spin him in the head and he's done.
And THIS was the "peace keeping" robot they had in mind?
